I live in Florida and that looks like what we call a King Mackerel. Is it the same? If so, about 40 lbs or 18 kg. Love this vids! Happy Easter from the US!

I bet your method of filleting those mackerel is one of the best. I worked in a wholesale seafood distributor for high end restaurants on the west coast of USA for a bit of time. Actually worked in a little retail fish market attached to the warehouse. We received seafood from around the world, every type a chef might want. Best work lunches ever, EVER. Anyway, the point is the crew of cutters that handled every type of fish you can imagine didn't really make up any new methods or play with it, they cut fast and according to instructions given a long time ago. Great bunch of guys, super efficient filleters. But you get to think about it, they dont, they have a freezer 30 feet tall full of fish waiting to be cut and shipped. The 'leave the fillet barely attached, make all your cuts' method, dude that is genius and I am using it on every fish except maybe a halibut, it makes perfect sense, it keeps the spine straight and (I suspect) makes the fillets easier to retrieve and better cleaner cut fillets. Cannot wait to try it. I worked in other seafood shops where I did some cutting as well. Processed small sharks for packaged dried shark jerky at one point. Nothing like filleting 500 sharks at a time, miserable. Long time ago, I wouldn't get involved in that kind of ecological abuse anymore.

@@SammyHitzkeFishing Here is something you might find useful. You know the Chinese BBQ sauce Char Siu that they make that red pork with? I just used it mixed with sweet chili oil and some Ponzu sauce to panko crust rockfish. Never tried this before, had no eggs and wanted panko, its freakin good if you like the flavors in those sauces. Just dipped the bite sized pieces of rockfish fillet in the mixture for about 20 minutes of soak, then used the sauce to get the panko to stick, went back and forth sauce to panko, letting the sauce get panko in it. Over rice, its way better than I had ever even hoped.

Ahh, the memories, I well remember the 28kg mac that we were lucky enough to snag, the short version is as I lifted it into the boat I slid my hand down the gaff to get more leverage the fish shook his head resulting in the tendons on my right thumb being severed....... a 2.5 hour boat ride back in, a 2 hour drive to the nearest hospital and micro surgery to repair the damage. Watching you, bought back all those memories....... worse of all, I was skipper and did not get an ounce of the fish to eat.

Hi Sammy, love the channel. Little tip for really big mackies i.e. over 30kg our best out of Dampier W.A went 42kg and every mack over 30kg has been caught on a live Gold Spot Trevally 1-2kg big bait big fish. Our best fish are late Sept,Oct breeding run around the full moon. All the best

The weight of that bigger Mackie was quite interesting. I caught one a couple weeks back that was 27kg and 1.51m long. Our fish were around the same length but were 6kgs difference. Just thought that was interesting anyways great vid Sammy keep it up mate

Grip N Rip Fishing Only thing I do is pat them dry with paper towel to get rid of some moisture, then vac pack and freeze! Last for 12months if you do it like that!

Hi @@SammyHitzkeFishing Short answer is as long as you want....Mackerel is ok in the freezer for upto 6months IMO. I don't get out as often as I would like anymore, so I freeze alot of my catch. So one day I just decided to trial freezing it in the brine and the results were fantastic and receive regular compliments. So, I would freeze the pieces fully submerged in the brine in a container. Pull the container out of the freezer and put it in your fridge to thaw out 3-4 days before you wish to smoke it. 2-3 days to thaw, 1 day to dry on the smoker rack in the fridge. Then cook it in the smoker as usual. I'm not sure if it's just an extended time in the brine or if freezing it infuses the flesh more. Either way it'll make your smoked Mackerel pop. Apologies for the novel and thanks for your videos 👍

Eddie Chin hey mate the yellow handle is a Swibo and the white is a dexter Russell. Swibo is a skinning knife and the other is just an 8 inch fillet 👍
