I Love this recipe, I was taught by my MIL,, , great teacher,, ,BUT we actually cooked it and sealed them as I was not familiar with that process...hopefully I can do it....HUGS

That one goes in the fridge and when you want to fry and bbq a bitoque /steak/beef then you would get a pepper from the jar and rinse it all day in water. (Depending how salty you like it) then cook with it on top and serve.

HI Sammy- great video, Love these Portuguese traditions. When the peppers sit for three days, does it have to be refrigerated?

Hi Victor, Yes, at the end after you put them in the jars and close them up tight. They need to be refrigerated to slow down that fermentation. If you leave them out or in just a cold room you’ll hear the jars pop as it tries to continue fermenting. I only know becuase of trial and error lol

We would let them sit in disposable lasagna trays covered with towels. Stored in a warm room and stir once a day unti the fermentation bubbles stop (could be 5 days). depends on how much salt we used. Then can them and refrigerate. 🇺🇸🇵🇹

When we go to buy them we asked for a bushel of hot red chili peppers and a box of sweet. The sweet peppers are fatter. I know that isn't quite specific. We go to shops that sell just these peppers and tomatoes by the bushels.

I’m not 100% sure why. I was told by my grandmother is kind of seals it. There’s probably a better explanation for this process. Every family I know that makes it does the same. So I know it’s part of the process you have to do.

Hi Sammy, you mention to put in fridge to ferment for a month and it’s ready to eat. My question is do you keep jars in fridge all the time or can you take them out and put them in a pantry room after a month

They last a long time! I don’t have an exact time frame but I still have and use jars I made in 2019. They taste great still. If anything I think they taste better. I still have so many Because I got pregnant twice. And hated the taste couldn’t eat it while pregnant. So I have a ton now to last another year! Lol

@@mystiquerose620 not sure how others do but we leave them in the fridge. I don’t have a second fridge. So half of one of my shelves is just jars lol. If you have a garage fridge or something that’s always best and store them in there. If you only want a small batch. Just need to cut down the ingredients right. Lol or if turns out good you can always share with your friends and family, even wrk ppl. :)

I ask because I noticed a few variety of peppers in the video. - long peppers (1:00 mark) - paprika peppers (1:04 mark) 2) At the 4:20 mark, when u mix in the added salt, you do not cook the peppers at all? Is this correct? I was surprised to see that so asking to make sure. 3) At the 5:00 mark, you state to let it sit for 3 days. Do you mean rest in the pots covered on a table at room temp? 4) Then after 3 days, you jar the peppers at room temp? 5) As for the jars, washing them thoroughly beforehand is all you did prior to filling the jars? Or did you boil the jars too so the jars were hot when jarring? Great video Sammy- Thank you.

Hi @SS-pi2yi okay! 1) the difference between the two peppers is the long skinny ones were the "hot" and the rounded/big ones were "Sweet" peppers. 2) We do not cook the peppers at all, just sit them out for three days and can them then straight to fridge. You'll see each day a crust of white formed on the top. Normal! just mix it once and continue to let it sit the remainder of the days. 3) Yes! you can cover or leave uncovered. We covered it becuase it was a strong smell in the house. We left it on the kitchen table. 4) Yes, can them room temp. and put in the fridge once sealed. 5) The jars were room temperature. Of course previously washed and cleaned dry. Hope that helps! Please let me know if you end up making them :) Enjoy! Samantha xoxo

Lastly, I am simply amazed that there is no cooking involved and is preserved by salt only! No vinegar even! Would you say this tastes pretty salty?

Hey@@SS-pi2yi You can marinate your meat with it. Lots of recipes require it. Use it when you cook shrimp. A recipe I plan to post soon on my channel. I just put up a video of me making my ribs and using it. Also the Portuguese white cheese you can add it there as well and eat if fresh. It does have a salty taste to it. So you wont need to add any! Thanks!

If your in the Toronto area. These were bought on Rogers Rd. But any European grocery store will be able to help you out. Probably will see bushels outside on display to buy

We do the same thing in my household with Italian style tomato sauce. My BIL would make the pepper sauce and we would trade. But he can't make it anymore. So now I have to make both going forward.

Roasting Pimento peppers I think. I get them at the Portuguese grocery store so for me it’s just red peppers. They look different from the bell peppers so it not difficult to confuse them. Then there’s the hot Piri Piri peppers. They’re smaller. Like a chili pepper. Hope that helps :)
