they are the default icons when the one uis are kinda removed i think, also its normal for a dev build to have old icons, can go same for the 16 early beta that had the old google search bar from android 2.0

AOSP is intended to be used by OEMs designing custom skins for Android so there's no point in making everything in it as beautiful as Pixel UI. Also, it isn't just in Android 16 Beta AOSP, but in the latest release of Android 15 AOSP too.

If you want to use one ui 6 you're our off luck since no phone ( atleast what I've heard) can use an OS that was installed before it's release(Eg. If my launched with Android 14 by default during it's launch, I can't downgrade to android 13 but I can use OSes that launched after that OSes release). If you don't want to the one ui 7 then either buy a s24( any phone that wasn't preinstalled with android 15 one ui by default) and you can downgrade the android version as long as it launched on the phone. The less expensive alternative is to just downloaded a custom rom for your s25. But since I see you want one ui 6 (the old one) I'd just buy a s24 before the one ui 7 update and not update to stay on one ui 6
