I went here during a tour and loved everything about it. it really is the best bread I have ever had. So airy and soft and just delicious.

In case you're wondering what he means when he said the original owner used the same piece of dough, sourdough uses starter dough that is constantly fed (so the yeast stays alive). That dough is probably the same piece as the original, making it reeeeeeally damn old.

@@Throw-ct7cv flour! Usually any unbleached flour is good but for consistency's sake i would use whatever flour the starter was started on

A sourough starter is perpetual and will live and thrive for many years if it's used periodically as new flour gives the natural yeast soemthing to eat and thus extends the starter. Large bakeries like Tartine and Boudin use their starter daily, doubling up the dough for the days bake and adding more flour and water to double up for the next bake and the process goes on for many years. San Francisco sourdough can be made only in San Francisco as the area's natural yeasts ( that are all around us in the air and are microscopic and basically invisible to the human eye ) determine the sourness of the local sourdough, thus sourdough baked in San Francisco can and will taste different from sourdough bread in Sacramento or Denver etc.

Esmeralda Maldonado I know right!? I went there in January of 2017 after we went to lake Tahoe and since it was super cold, the only thing that warmed me up was how freakin good the new england clan chowder was.

The taste of Boudin sourdough bread is quite iconic; and I have sadly not eaten at the original or primary bakery at fisherman‘s wharf where this was likely filmed yet I’ve walked by the location and number of times. Maybe I will on my next visit. I am a born and raised San Franciscan, Born in the city, raised mostly in Marin north of the Golden Gate bridge, my family and I would visit the city often, and I do miss the place for all its beautiful imperfections and no matter what happens there.

as I bake sourdough bread myself, I'll relly love to know at which temperatures he fermets the dough for that intense favor, as he apparently uses a one step fermentation process (including the salt?) with no pre-dough

I knew it has to be boudin from the title. I visited SF once and tried it the first night. I ate there every single day of my vacation after. I still dream about their tomato soup in the breadbowl and it's been 11 years.
