अळूची पाने ७-८ मोठी | Alu Leaves / Aravi / Patra Leaves 7-8 med
वाटण |For Watan
• ओवा १/२ टीस्पून |Carom Seeds ½ tsp
• जिरे १ टीस्पून | Cumin Seeds 1 tsp
• लसूण ७-८ पाकळ्या | Garlic cloves 7-8
• हिरवी मिरची ५-६ | Green chilies 5-6
मिश्रण करण्यासाठी | For Batter
• बारीक चिरलेली कोथिंबीर १/२ जुडी (२ कप) | Chopped fresh coriander 2 cups (½ bunch)
• बेसन १ कप | Besan 1 cup
• तयार वाटण |Ready Watan
• पांढरे तीळ २ टेबलस्पून | Sesame 2 tbsp
• हळद १/२ टीस्पून | Turmeric ½ tsp
• धने पूड १ टीस्पून | Coriander pw 1 tsp
• मीठ चवीनुसार | Salt to taste
• चिंचेचा कोळ २ टेबलस्पून | Tamarind Pulp 2 tbsp
• चिरलेला गूळ १ टेबलस्पून |Chopped Jaggery 1 tbsp
• ओल्या नारळाचा चव १/२ कप | Scraped Fresh Coconut ¼ Cup
• तळणीसाठी तेल | Oil For Frying
How to make Crispy Alu Vadi Recipe | How to make crispy Kothimbir Vadi Recipe | How to make Alu Kothimbir Vadi Recipe -
• Wash & wipe Aravi leaves, cut the hard stems as shown in the video & roll gently using a rolling pin & keep the leaves aside for sometime
To make aluvadi or kothimbir batter -
• Into a grinding jar take garlic, green chilies, carom seeds & cumin seeds & grind them without using water.
• Into a mixing bowl take chopped fresh coriander, to this add ready watan, besan, sesame seeds, turmeric, coriander pw, salt to taste, tamarind pulp, jaggery , fresh coconut scraped & mix everything well.
• If required use water to make semi thick mixture (halva like consistency)
• Place a aravi leaves onto a flat surface, spread a thick layer of the batter all over the leave, place another leave onto the previous leave, spread the thin layer of batter, again place one more leaf and follow the same, here we have done 3 layers you can add more
• Then fold the edges from all the sides, to avoid batter coming out, and then make a tight roll
• Apply some batter to the edges to stick to other edge
• Following the same process, make the rolls out to the remaining leaves & batter
How to steam aluvai -
• heat up some waterl into the steamer or kadhai or vessel.
• Grease a steaming plate with some oil, put the ready rolls onto it, put the plate only the steamer & steam them for 15-20 or depending on the size of the roll.
• After 15-20 mins, insert the knife to one of the rolls, if knife comes out clean, the vadi is steamed from the inside.
• Take the vadis out, allow them to cool down completely & then cut the vadis.
• You can store this steamed vadis into a refrigerator for a week, store them into an airtight container
How to Fry Kothimbir Vadi -
• Heat up some oil for frying into a kadhai. Once oil is medium hot, drop the vadis into the hot oil, turn the flame to low & fry the vadis until they get crispy.
