When I lived for a while in the Dominican Republic I remember spending a Saturday on some long empty beach near the border with Haiti and these local guys I came across who were so welcoming - we dug up clams, caught crabs and finally some kind of perch caught in a small river in these woven cane cages they had - and then later in the day everything was boiled up in a big cauldron they had brought with rice boiled in another pot. They added the juice of wild limes, some local herbs and salt they brought. I produced a big bottle of Brugal rum which I had in the car and the mood was perfect. One guy invited me to spend the night with his family in their very simple banana leaf and coconut leaf thatched hut in their little hamlet. I had brought my tent but they wouldn't hear of it. The next day I drove back to Santo Domingo and my high pressured job thinking 'that day, and that food and those simple good people who were so kind to an utter stranger, this, this I will never forget".

When we get fresh clam in the Philippines, my mom let the clam soak in salt water. So that the clams will spit out the sand inside of them. So that when you eat ,your not eating the sand too.
