Stop Boiling Pasta in WATER, You'll Thank YOU! Seriously there are so many other ways to enjoy pasta! The best part besides being incredibly tasty is this comes together so much quicker, uses less pots and pans and a heck of a lot less wasted energy trying to get a pot up to a boil!
You can use any pasta you want, any liquid you want as a base and any veg! I know this is taking it back to the basics but sometimes a reminder is nice!
Check out just about any risotto recipe and swap out the rice for a macaroni, spaghetti or whatever pasta shape you want.. I love this hack!

Havent stopped by on this channel for a while. Congrats on the weight loss. Im sure it came along with some major health changes. Did you get any new abilities unlocked or something? When I lost weight everything feels lighter and i dont feel so tired all the time

Still see it repeated on cooking shows and I want to reach into the screen and shake them. Old Wive's Tale repeated over and over. Thank you ATK for actually doing an experiment and discovering that even after soaking in water, they take on almost no moisture.

I always thought that mushies get spongy when you wash them, but its not like you're soaking them in water!! Besides, who wants all that dirt in the mushroom stock??

I hadn't heard anyone say not to wash mushrooms. That's absurd. I know they're like sponges. Wash and set aside to let them dry for a bit if that bothers you. I used to live near a mushroom farm back in the day. Dumptrucks would leave piles of cow manure in a field - literal manure - and soon the mountains of manure would be covered with mushrooms. So it's not just dirt on them, it's manure. Wash them.

Aren't mushroom now grown on peat moss and not earth and manure? Personally I wash all fruits and veggies because hygiene is not the same everywhere, but I make sure to wash the top and not let water inside. Then I quickly wipe them off.

One day I got lazy and just dumped my pasta sauce over some rigatoni without adding water [added some veg and basil] and was amazed at how the pasta starch made the sauce creamy! Later I tried making curry with bow tie pasta in a frying pan [using only a little water letting it simmer down and adding more if needed] and it was sooo good.

It always annoys me when my husbands boils a giant pot of water just for a little bit of pasta. I cook all my noodles in just a bit of liquid and they are fine. Tasty even.

Before the "Italian pasta police" comes, we actually do this in Italy. It's called "pasta risottata" and it's delicious. I do this with penne, mushrooms and peas. BTW elbow macaroni IS pasta 😂

In Italy, we do "pasta risottata", which is more likely making a risotto with pasta, so to speak.... more traditionally pasta is boiled and 2-3 minutes before is ready it is tossed into the saucepan where you have pre-made the sauce and keep on cooking together with the pasta for the last few minutes...using, of course, the pasta boiling water to create that creamy texture that everyone loves...

Thank you for the mushroom message! Everyone gives me a lot of crap for soaking mine. I started growing my own mushrooms last year. I think anyone who thinks they shouldn't. Here is the reason you want to wash or possibly soak them. Portobello and button mushrooms grow in composted manure....so everyone who doesn't wash their mushrooms, please stop eating crap!😂😅 Also, I soak morels in salt water for about 8 minutes. They grow wild all over my property. They aren't brown....that's ALL dirt or sand. They are white. Always cook them! They are slightly toxic raw.

The colour of morels varies widely depending on the particular subspecies, some are definitely on the dark side. And yes absolutely cook them, they can actually be deadly when consumed raw. Always cut in half to check they're not false morels! The false ones are hollow inside, you can find pics on Google

@vacafuega they are all hollow, though the false ones feel cottony in the stem. Easiest way to distinguish them, false morels, the stems are not connected to the caps.

Well technically this is boiled in water but it's more like when we do rice with the right amount of seasoned water like pilaf, the trick is to add the right amount to pasta that is harder to do with pasta than rice. Too much water and you'll have watery pasta or too cooked pasta, at the opposite you'll have pasta too al dente (but you can easily add some boiling water). The result is not so different so I don't do this way. Also be careful of the amount of salt because in the normal way you throw it away a great amount in this way you'll eat it all, so put a lot less salt.

I tried this maybe 10 years ago and am also not a fan. What some describe as creamy, I describe as overly starchy which applied to pasta is not complimentary. This reminds me of someone trying to fancy up what is essentially an identical cooking method to hamburger helper pasta dishes. I do agree that doing this will intensify the flavors absorbed by the pasta sans actual salted pasta water but as spoken to above, the end result is chewy and starchy, not something I want to eat.

I think its a lot more tricky to get right this way. If you boil pasta seperately you strain out all the water at the end and you don't need to measure all precisely how much moisture you boil with. I personally really hate leaving too much moisture in. Ruins the whole pasta. And don't want to overcook it either, So i don't risk it. I have seen people make pasta seperately and then not use a strainer at the end because they don't wanna clean it. Usually leaving too much water that all gets on the plate. Worst of both worlds. That maddens me 🤣.

The "don't wash mushrooms" does apply if you are not cooking them right away. When foraging, it can be tempting to wash the dirt off before storing them in the fridge, but that's a no no, so I've heard.

Love the video! As an Italian I would say that elbow pasta IS pasta… it’s probably not as used as other ones but it is indeed pasta. In Italy we usually use this cooking technique for our “risotto” (rice) and it makes it taste really good! Also I never heard about this thing of not washing your mushrooms… I have a close cousin of mine that worked (and still does) in various Michelin starred restaurants (in Italy, France and Japan) and when I help him cook whenever he comes visit us he always made me wash the mushrooms (when he needed it)… so is it a mushroom type thing? Maybe some of them don’t need to be washed because they’ve already been washed? Quite confusing to be honest😂

Definitely trying this, thank you. I've been doing the soaking method ever since I saw that video of yours and I'll still do it for baked pasta dishes but I'm eager to try this for a stovetop dish. Thanks for the mushroom washing PSA. So many people spout nonsense because they heard it 'somewhere' and don't have the inclination to find out if it's true. A completely unverified source indicates pasta absorbs roughly 1.5 times its weight in water. You'll lose some to evaporation but that might be a good starting point for the nerdy nitpickers, er, analytically minded among use. Full disclosure: I'm totally measuring it. FWIW peanut butter isn't 'butter' either...yeesh

Many years ago I saw Alton brown clean mushrooms three ways. He weighed them before and after. One was a damp towel, 1 was Under running water and I think one he's soaked em. Can't remember for sure. But the weight difference before & after washing was nothing, so yes I wash my mushrooms. Especially store bought button shrooms that are filthy. This looks so yummy, will definitely be getting it. Except I'll use onions & garlic rather than shallots. I've tried them & I reckin my palate isn't sophisticated enough to justify the cost. lol I've cooked one pot pasta & rice dishes like this for decades. I was raised only by my dad so ate a lot of hamburger helper as a kid. Same premise, but now we make it taste good lol. Thanks for a great video.

Great recipe! Mushrooms is a perfect meat substitute for pasta. One time I used mushrooms, can't remember if I used ketchup or just cooked tomato, and my homemade coconut yogurt, wow it tasted almost like the best lasagna of my life. Obviously you are vegan, right? Pleasant surprise to randomly find this channel.

It's not that you don't want to wash them, it's that you don't want to run them under running tap water, which they will then absorb. Mythical Kitchen tested it, it proved out -- running your mushrooms under tap water gives you disappointing mushrooms. "They will be fine" is not a high bar, when it also means "They will be worse than if you do the other things."

It only makes a tiny bit of sense to wash mushrooms because there could be chicken or horse manure and / or chemicals in the dirt. It is like not putting your clams in clean water with corn starch to get them to spit out the dirt and digestion in the belly. I've been washing mushrooms for years. This recipe looks banging, thank you!

The one issue I have with your method is how you achieve a controllable al dente experience. Normally you cook separate until about 2 minutes before the al dente point, strain and then add to a dish where they soak up the liquid and become tasty and also help to reduce the content of the pan. That's a very controllable way to achieve the ideal (personal) bite on the pasta. I think your pasta came out quite soft. If you like it that way, that's fine.

i cook my one pot dishes almost the same way. but fry the mushrooms for the roasted flavors and add cream (or a cup of oat milk instead of water if it has to be vegan). i wash the mushrooms too, but let it a bit dry before frying.

Last time i tried a pasta like this the noodles gave the sauce like a powdery-starchy addition..i recommended soaking the noodles like potatoes or even boiling then for like 1 min and straining them..

Same thing just happened to my dad... he doesnt roll his eyes haha but he definitely isnt shopping for vegan butter. Last time he was in town he just used ours vs going to get his own butter and he loved it. He said hes going to just start getting that now. Same thing happened with vegan mayo

It's very good and tasty, but mushrooms are better cooked in oil with the onion and garlic, slowly until onion is brown, than boiled. For the broth you can use water of soaking dried porcini overnight (measure how much liquid you will need). It will be very dark and will smell amazing. No extra water needed. Some grated cheese at the end doesn't hurt, though. Just another way.

Pasta absorbs its own weight in water to get to Al dente. So, you can calculate the amount of broth by weight.

This video was in my recommendations just today. I subscribed about 15 seconds into it. Is Monica your wife? She is very pretty. I like her commentary, because she is honest, and she has a dulcet speaking voice. I’ve been vegetarian since I was nine-years old. My mom learned how to mix proteins to make sure I got complete amino acids. Also, hummus is a “food group” in my family. lol. I’m popping over to your site now

Only because you mentioned the vegan butter & that I worked at a restaurant that used vegan supplies, VioLife has a pretty decent vegan cheese (coconut oil base) that works pretty well for pizza. Stickier when hot than standard mozzarella, doesn't necessarily taste like mozzarella either, buuuut I still enjoyed it. Extra note, I'm not vegan

From a recipe I've found it's coconut oil, canola oil, soy or almond "milk", vinegar and yeast. Ain't no way in hell it actually tastes like butter. And I can talk about it, because I don't eat margerine, because butter is tastier than margerine.

Yeah, you can make the "risottatura" cooking tecnique with pasta, but as you rightfully addressed at the end of the video, you would need to adjust amount/type of liquid and timing for each recipe and type of pasta, transforming it into a tedious useless exercise, whereas everyday Italian cooking is often based on eyeballing. For a fancy pasta once in a while, or if you like experimenting with food you can do it, but I personally prefer following the tradition and having solid result (and not wasting time and food on the meantime).

Damn right DeCecco elbow macaroni is pasta! I got some to make macaroni salad, which I never made, and instead just ate it with a nice meat sauce, and it's really delicious! Great sauce adhesion, great flavor, easy to shovel into your face with a big spoon. It's awesome!

It's basically lo-mien Italian style. The noodles absorb the sauce the noodles creates the creamy sauce.

Hey, italian here: this is why who really knows how to cook pasta saves the pasta water and uses the starch in it to create a creamier and stickier sauce that really is ON the pasta. 😊 You can still cook it in water and have the same result using this trick. I also think that cooking it in salted water makes the cooking more uniform and with the right amount of salt absorbed by the pasta before getting into the pan with the sauce and pasta water. 😊

I cook my dried pasta directly in the pot of pasta sauce (I add extra water to compensate for the water the dry pasta is going to absorb).

I Usually just peel my mushrooms when i fry them so they dont get slimy. But if i boil them then i wash them with water

I’ve been making my pasta like this for a while now and it has totally changed the game. The sauce comes out velvety and sticks to the pasta. And fewer dishes to wash? Who’s not down with that? 😊 Yes, wash those shrooms! 💦 🍄

Yeah, the Publix is on the lame side... Way too expensive for what you actually get. I go to other grocery stores that sell clusters of oysters. I'm trying to grow some at home now.

That wasn't rosemary but sage. As for the principle, although I'm Italian, I approve 😂. It's actually called "pasta risotatta" and it's always existed in certain parts of Italy.

You might be confusing rosemary for sage... Ok you guys caught this already 🤣. Anyways, looks good! Reminds me of my oil based pasta with tons of mushrooms, chopped gourmet olives and pickled spicy eggplant. I do boil the pasta first but its literally an epic pasta. One retailer here in Canada (Loblaws) has this "black menu" mushroom and black truffle puree in a jar... Oh man, talk about flavor boos!

Well the point is: Use liquid! You can also cook you pasta with just broth and eat it together with it. Using water is just the more common way. Not everyone has or wants to use wine and/or broth.

The bacterias in dirt are very similar to your own gutt bacterias, they have similar purpose, breaking/decomposing... it's not "dirty" to eat a bit of dirt. Eating a bit of dirt has been for a long time a natural "pro-biotic" treatment in some cases.

There is no need to cook the pasta in the pan right away. Usually if you want to "rispettare la pasta" you cook it for half or a bit more of the cooking time in water and then you finish it in the pan. Just takes less time for the same result. P.s. those mushrooms could have benefitted a bit of colour and not just a straight up boil

I haven't tasted it, but my experience with mushrooms is that everything gets their taste unless you properly season it or mix in with something stronger (rice tomato), so i guess this plate just tastes like mushrooms and mushrooms. And the salt i guess it's just an american thing to add the weight of an ar15 of it to any recipe, whatever the dose may be

I don’t know what cups are as I’m English and it’s not something we measure with at all here in the UK, but I’ll look up the equivalent. You basically made a version of Hamburger Helper. Macaroni, sauce packet, milk, water & browned off ground beef. Bring to boil over med heat, turn down to med-low when boiling, stir, let simmer for 10 minutes, stir, leave to simmer for another 10 minutes, stir, serve. Either way you do it, you're basically boiling the macaroni and the beef with the liquids and sauce. You say your butter is vegan. All butter is vegan. Cows are vegan. They eat grasses, legumes, alfalfa, clover, and hay to produce milk which is turned into butter. Your "oil" substitute for Real Butter™is no equal substitute.

Okay so the only reason to not boil them in water is the tast? I cook before I go to work. So I don't have time to cook for an hour. I need it ready in 20 minuts. And cooking them in water is really quick. But I could try this in the weekends and see if it takes longer or not.
