Looks great! Here's a tip. Taste the mixture before you put in the egg.The egg will not really change the flavor profile, so you will have a good idea of whether you need to adjust the seasonings before you add the egg.

Momma and my aunts once a month would get together at each other's house (switch every month)we all had full kitchens in the basement and spend the entire day making homemade pasta, gnocchi and lasagna and manicotti sheets divided between 10 family (we have a large family. ) place in freezer and whenever we needed pasta just go to the freezer. Rather than messing with a piping bag, we cut the noodle length way and just spoon the filling into the noodle. We then place the noodle in the pan with the cut to the bottom. Much faster, and works perfectly. Happy holidays. Cheers.

I have made lasagna without cooking in the lasagna. All I did is layer lasagna hamburger cottage cheese and cheeses and pasta sauce and then lasagna on top and of the cheese on top of that and it was so good all that moisture cooked the lasagna just right but put it into the oven raw. I love spinach dishes and it looks so yummy I'll have to try it out. I love you guys and have a great day and weekend ❤️❤️❤️❤️

Hi Katherine. Merry Christmas to you and your family!! I am Italian. It us very easy to make your own shells. Takes only a few minutes. 1 cup flour, 1/2 cup water, 1/2 cup milk, 1 egg, dash of nutmeg. Swirl in blender. Then make crepes in frying pan. Do not brown. Cook quickly. If you think it’s too thick, add a couple of drops of water. Store flat wrap in parchment and you can refrigerate or freeze but keep wrapped in plastic and in a freezer bag, that’s it! Defrost or if using it fresh, use your filling, roll up, sauce and bake! It’s that easy! Buon Appetito!!

Johnsonville sausage is the most reliable when choosing a premade Italian sausage. I also buy in bulk rather than sausage links, if available and it generally is available. I generally make cheese manicotti and serve meatballs and/or sausage on the side. I have made a meat and cheese filling as well. This looks wonderful. Merry Christmas to your family.

This looks like a really good meal and a special one. I can see making this up for a special day ahead of time and freezing it. Thanks for all the good tips on how to make this including making sure your meat is good and fine, the piping bag looks like it it works great and just cooking those halfway would make it a lot more manageable. This looks like a freezer meal afternoon type thing for possibly a big special meal to me and then a very stress-free day of cooking with some garlic bread or rolls and a big salad oh my you give me ideas we've got several birthdays coming up in the spring with people that like Italian,

I made this for my family and it was great. I chose to use onions and garlic, cooking before adding the sausage. I made 2 mistakes, I used a bit of olive oil for the onion & garlic and put sausage in. There was still oil left over. Next mistake was cooking the shells too long but it all came out great. Love your videos, easy and taste so good!

@@CatherinesPlates Whole family loved it! I added ricotta and cottage cheese to the sausage mixture. I also threw the spinach and garlic and some chopped onion into the sausage before it was done cooking instead of after. With my massive teens that are all adult-sized now, I used one lb mild and one lb hot italian sausage and 2 boxes of noodles. I don't measure but tried to double cheeses. It was perfect. I will use about a cup more sauce next time but thats all I'll do differently. Thanks again for the recipe! Love how budget friendly and family orientes they are. I am going to try your new cheese broccoli rice dish this week! Take care :)

Catherine, this looks really good! Quick suggestion, add eggs to the ricotta then add to rest of the mixture. The eggs make the cheese a better consistency to work with. I know you prefer cottage cheese and that doesn’t need eggs but most recipes with ricotta call for an egg.

The last time I made this dish was about a little over a decade. I don’t know why I haven’t made it since. But I used Cottage Cheese and Ricotta Cheese mixed together so delicious. I was going to make a lasagna tomorrow but I think I’ll make this instead thanks for the reminder. 😂

I think I did something wrong because the filling was not as thick. I think I had too much oil on the spinach but it still turned out good. I made this for my 88 yr old father when I went I Iowa to see him. He loved it so I made a batch before I left.
