Embark on a culinary voyage through the heart of Italy with Nonna's renowned recipe for savory taralli. Bursting with aromatic spices like chili, black pepper, and fennel seeds, these delightful treats offer a symphony of flavors that capture the essence of Italian cuisine.
INGREDIENTS:
Yeast: 1 tsp
Sugar: 1 tsp
Lukewarm Water: 2/3 cup
Flour: 6 cups
Sea Salt: ½ tbsp
Fennel Seeds: 2 tsp
Black Pepper: ½ tsp
Chili Pepper: ½ tsp
White Wine: 1 cup
Olive Oil: 1 cup
Egg (for egg wash): 1
Olive Oil (for egg wash): 1 tsp- 1 Egg + 1 tsp. Olive Oil
DIRECTIONS:
*1. Prepare the Yeast:*
- In a small bowl, combine the yeast, sugar, and lukewarm water. Stir gently and let it sit, allowing the yeast to activate. Stir occasionally to ensure proper dissolution.
*2. Prepare the Dough:*
- In a large mixing bowl, combine 4 cups of flour with olive oil, white wine, and sea salt, using your hands for thorough integration.
- Incorporate the remaining flour and the prepared yeast mixture into the bowl.
- Knead the mixture by hand until the ingredients are fully combined.
- Add fennel seeds, black pepper, and chili pepper, continuing to work the dough until uniform.
- Dust the dough with flour to prevent sticking, cover the bowl, and allow the dough to rise for approximately 1.5 hours.
*3. Form the Taralli:*
- After the dough has risen, knead it briefly to release excess air.
- Sprinkle flour onto a clean work surface and roll out the dough with a rolling pin.
- Cut the flattened dough into long strips, then hand-roll each strip to elongate it further.
- Fold each strip in half loosely, twisting both ends to form a braided shape.
- Pinch the ends together to create a circular shape or leave as sticks for variation.
- Place the taralli on a parchment lined baking sheet
- Observe the technique from Nonna, for optimal results.
**4. Egg Wash (for a Glossy Finish) & Bake: **
- Preheat the oven to 350°F (175°C).
- Prepare the egg wash by whisking one egg with a teaspoon of olive oil.
- Brush each taralli with the egg wash to provide a shiny finish.
- Bake for approximately 25 minutes or until they turn golden brown.
*5. Serve and Enjoy:*
- Allow the taralli to cool slightly before serving. These delectable treats are best enjoyed with a glass of wine or as a delightful snack any time of day.

Hi nonna Teresa I thank you for sharing this recipe very easy to do and let me tell you they are delicious I’m putting a picture of my taralli .Also I’m wondering if you have a recipe of the taralli done with the eggs and cut around after boiling before they are put in oven .Thank you again ❤
