Delicious savory onion pie. Great tips for leftover filling. I love that your nonna doesn't mind using modern contraptions like the stand mixer for her dough but I also love the broom handle rolling pin. Buona Pasqua , thank you Rossella & happy birthday nonna Romana :)

My grandmother made this with lots of onions and ricotta forte called it calzoun...( from palo del collection bari)

This is awesome! My family does an open pizza, and instead of calamata olives (which sounds delicious) they use Spanish olives with pimentos. Might try the calamata next Friday. Thank you for sharing!!

Rossella, I don't have a pan that large...would that dough quantity make (2) 8-9" cake pans? What do you recommend? Thanks! :-)

Just use a 9 inch. You'll have some leftover dough, but not enough to really do something with. You can always roll out the extra to make a design for the top like a heart or a cross or even write something. Nonna usually writes Buona Pasqua on top! Lol

+membernypd I wouldn't use a spring form. You can use a tart pan with a removable bottom if you like though
