My favorite pie! We purchased wheat berries from a farm in Cazenovia NY, and I make this every year - growing up, every bakery made this really good in our small Italian neighborhood. Now I make it myself - the bakeries are gone - it comes out almost as good! Thanks for the recipe - I will try this one today! saluto di Pasqua!

I absolutely love grain pie... trying to explain this dessert to non-Italians you always get some weird looks, but most people once they try it they understand lol... This and pizza rustica were the things I looked forward to most each year, thank you for sharing this

Rossella, Hi...can I use Grano Cotta instead of the hulled wheat? If so, would I use a whole jar and would I need to add the butter? What's your opinion, I'd like to know! (sounds like an old commercial lol)

membernypd I believe you can. I imagine You would still add butter. But I haven't done it with this recipe so I can't guarantee the result! Do an experiment with the filling and replace it. But try it with the hulled wheat also so you can see the difference. It's very good! 😘

Oh I've made it with the hulled wheat!! (was trying to consolidate time. In other words, cheat!!) Ah, let me go with what I "sort of" know. I had a hard time finding the hulled wheat in Vegas...Staten Island LaBella probably has it. TG they're within walking distance :-) Thanks, as always...

I've never used it but I imagine the flavor isn't as strong so you might need a tiny bit more.

@@cookingwithnonna I make this every Christmas and Easter and use the orange blossom water, I found using 1 tablespoon works well because the orange blossom water is the Pastiera, without that it’s not true Pastiera. Good luck!

Excellent recipe except you should use fior di'arancio or millefiori ( orange flower essence or 1000 flower essence) or orange blossom water. "The orange extract is an ok alternative if cannot find that where you live tho

Don't you cook your grano cotto in milk and butter to make it creamy first? I would think the wheat berries would be awful chewy, no?

diane sanzone nonna Gilda doesn't do that because she uses hulled (shelled) wheatBerries. The grain comes out very tender. Not chewy!
