Scenic Stops: Copper Kettle Factory S2

The Picking Copper Kettle Factory was featured in season two of Scenic Stops, an original program on WBGU-TV in Bowling Green, Ohio. The factory was built in Bucyrus, Ohio in 1873, and started building apple-butter kettles in 1874, which have now been made there for 139 years. The Picking Factory makes their kettles by hand, and is the only company in America that hammers them by hand. In addition to apple-butter kettles, Picking makes copper drums for tympani for some of the major orchestras in the United States. Very cool place to visit. We loved it. We also went to Anthony Thomas chocolate factory and Cooper's Milll (old fashion apple butter and Jellies) where we saw the copper kettles made by Picking Co. being used.

Can you give me more information about cooking with copper kettles? I know that the French have been cooking jams for decades in copper kettles but I keep hearing that you can poison people cooking anything acidic in copper? What is truth and what is myth?
