BUDHAAS DELIGHT
Ingredients
Chicken 500 gm cut into small cubes
Flour 2 tbsp
Corn flour 2 tbsp
Egg 1
Salt ½ tsp
Black pepper ½ tsp
Dark soy sauce 1 tbsp
METHOD
Marinate chicken with all the above ingredients, deep fry and keep aside.
Ingredients for Stir Fry Vegetables
Mushrooms 6 cut into slices
Baby corn ½ tin
Ginger julienne 1 tbsp
Crushed garlic 1 tbsp
Dried red whole chilies 6
Cabbage julienne 1 cup
Capsicum julienne ½ cup
Carrot julienne ½ cup
Ingredients for Sauce
Sugar 2 tbsp
Chicken stock 1 cup
White pepper a pinch
Black pepper ½ tsp
Vinegar 2 tbsp
Soy sauce 2 tbsp
Corn flour 1 tbsp heaped mixed with 2 tbsp water
METHOD
Mix together all the sauce ingredients and keep aside. Deep fry the marinated chicken and keep aside. Heat oil in a wok, sauté ginger garlic for a min, add dried red chilies, all the vegetables, stir fry on high flame, add the fried chicken and sauce, thicken with corn flour paste.

SCHEZWAN CHOWMEIN
Ingredients
Egg noodles 1 packet boiled for 3 mins
Boneless chicken 2 breasts cut into thin julienne, marinate with
Corn flour 1 tbsp heaped
Salt ¼ tsp
Black pepper ¼ tsp
Soy sauce 1 tbsp
Mix all together and shallow fry chicken, keep aside.
Ingredients for Vegetables Stir Fry
Green onion 3 cut diagonally into strips
Carrot 1 cup julienne
Capsicum 1 julienne
Cabbage 1 ½ cup julienne
Ginger julienne 2 tbsp
Button red chilies 6
Crushed garlic 1 tbsp
Oil ¼ cup
Ingredients for Sauce
Chicken stock ½ cup
Dark soy sauce 2 tbsp
Light soy sauce 3 tbsp
Vinegar 1 tbsp
Sugar 1 tbsp
Schezwan sauce 1 tbsp
Chili sauce 1 tbsp
Chicken powder 1 tsp
Black pepper ½ tsp
Salt as required
METHOD
Mix together all the ingredients for sauces and keep aside. Marinate chicken strips and shallow fry and keep aside. Heat oil in wok, add ginger garlic with button red chilies, add in carrot, cabbage, capsicum, add fried chicken with the sauces, add the boiled noodles, mix well to coat the noodles with sauce. Finally add spring onion leaves, toss well and remove.
