RECIPE for Lemon Zest Cheesecake:
Boil 450 ml milk.
100 grams of flour.
1 tablespoon of sugar.
Add hot milk.
Mix well.
Chill the mixture until warm.
Add 7 g dry yeast.

Leave the mixture in a warm place for 15 minutes.
Add 1 teaspoon of salt.
1g vanilla.

1 egg.
Mix well.
Sift 450 g flour.
1/3 teaspoon baking powder.
Add flour in portions.
Knead the dough with a spatula.
Add the rest of the flour.
Knead the dough with your hands.
Put the dough on the table.
Mix well with your hands.
The dough is soft and doesn't stick to your hands.
Lubricate the bowl with vegetable oil.
Put the dough in a bowl.
Cover the bowl with a lid.
Let the dough rise in a warm place for 1 hour.
The dough has doubled.
Beat down the dough.
Cover bowl with dough.
Let the dough rise in a warm place for 1 hour.
For the filling:
700 grams of cottage cheese.
150 grams of sugar.
1 egg.
Lemon peel.
1g vanilla.
Mix well.
Add 60 g raisins.
to mix everything.
The dough has risen well.
Sprinkle the table with flour.
Divide the dough into 16 pieces.
The weight of each piece is 80g.
Form a ball from each piece of dough.
Cover the dough with foil.
Leave it like that for 5 minutes.
Roll out a ball of dough with a rolling pin.
Put 1 tablespoon of cottage cheese on the dough.
Make three cuts in the dough.
Fold the dough like I did.
Form buns from the remaining dough.
Repeat after me.
Place the buns on a baking sheet lined with parchment paper.
Cover the buns with cling film.
Let the buns rise in a warm place for 30 minutes.
Brush the buns with a mixture of 1 egg yolk and 1 tablespoon milk.
Sprinkle buns with sugar.
Bake the buns in the oven preheated to 170 °C for 20-25 minutes.
