I have a question for statement of purpose for PhD application. In statement of purpose, do you have to write specific professor's name if you want work with him?

almost always yes. You should have made contact with said professor prior, and should have had a dialogue and their "blessing" with highlighting and mentioning them as a potential advisor in your SoP. The "cold-email" professors is not a well known tenet of the PhD application process.

Older graduates are more common in public health. At Berkeley, the average MPH student was 5 years out from undergrad. I have a lot of those examples and I'll try to share some.
