Hi Joe. just watched the brewing video and now the review for the Scottish Ale, and it's got me pretty stoked. I've got my first ever Strong Scottish Ale in my Fast Fermenter. I have a friend of Scottish ancestry and she has a birthday coming up in June so I came up with the recipe I used for this beer for her. She's not a fan of the really dark roasty flavors so I stuck primarily with Special B and Cara-aroma for color and flavor. Threw in a little smoked malt to bring out the flavor. I went with a 90 minute boil to try and enhance the carmel flavors. I have to say, it smells incredible as its fermenting. Going to bottle this one in some Grolsch flip top bottles. I like the character they'll add to this beer. Just wanted to share this with you. Thanks again for making your videos. Cheers.

If you ever feel up for it, and still have the set-up around, I'd love to see an old-school video where you go back to mashing in the cooler and cooking over gas etc. The new electric set-up is amazing, but less relatable to me, so might be a nice change of pace to do a little time travel back to the early days of the channel. :)

Hi Joe. I really like the way you have built your brew system. I am at the other end of the world and am building my system based on yours and an having trouble finding the thermo sensor and couple plus the cord with the plug on each end. can you point me in the right direction?

try adding in some smoked peat malt next time to get the true scotch ale. about 8 oz per 5lb brew is good to start with. flaked oats also add a slight creaminess too.

Scottish ales are usually served warmer so I'm assuming he meant the beer was too cold which might mask some of the flavor.

Jo English ales are not cloudy at all, If I were served a cloudy pint it would go straight back. I brew 900 ltrs at a time commercially and if any of my beers were cloudy they would be returned. Try dumping gas and add some gelatin to the keg and re gas
