For making the points not get checked all the time, instead of making a variable, you could simply use the wait until block, "wait until NOT × position of pipe = sprite 1"

The problem is that the xposition of the pipe may not always be exactly the xposition of the chicken, so sometimes the condition might not even be true.

you can make a special hitbox for the bird and make a custom block which switches to a bit hitbox which is smaller than the bird and then checks for touching pipes which give the player more room for error

At 8:13 it's easier to add an outline to the rectangle and use the paintbrush to go over the other edges. Also at 16:44 just change score by 0.5 so the top and the bottom change it by 0.5 so the score changes by one. This happens so quick that the player can't see it.
