Hi friends, it was such a smokey day today so I decided to stay inside and make some yummy food for my family from the farm. I made a chicken and leak with cream sauce bake and canned apples from the forest garden. I hope you enjoy coming along with me.

If you freeze dry some of those green Leek outer leaves, then blend into a powder, becomes a useful addition to stews, casseroles and other meal preps.

What you could do is pound them out a little with a meat mallet or rolling pin. then stuff them,roll and tie it.

Leeks are awesome to grow! Especially for potato leek soup with a little bit of bacon and fried shallots on top and of course potato leek gratin is great too! Can't wait to try your recipe! Your leeks look fantastic, Chelsea!

I love leeks but I have to say that I use both white and green parts of leek after peeling off some of the top most leaves which usually are looking a bit messy you can cut up the white and green and cook. It has great tastiness. I love with butter and potato, in fact just about anything. Leeks are very versatile in the kitchen.

The green parts of leeks are awesome in soups. Either leave them in big cuts and take them out before serving. I started to cut them thin and leave them in the soup and it's so good.

We tend to use most of the greens from the Leek as well. Especially in soups. Just cut of 7-8cm or so. Most of the good stuff (vitamins etc.) is in the green part not the white. As dirt tends to be inside the layers, it`s important to cut them first in rings and then soak them in water to remove the dirt.

Leeks need to be washed after they are chopped. Due to how the grow they often trap dirt in their layers. You put them in a large bowl of water and swish them till the rings separate and the dirt falls to the bottom.

So many great leek dishes, we really love them poached in milk for a lovely side dish to fish or chicken. If you would like them as a star of the dish, then burnt (chargrilled) leeks are absolutely stunning - we also love them as a meat free option, packed with flavour, and lovely over a little tahini.

Hi from Australia, use grain mustard in the leak and chicken dish, its supper delicious, just spread a little on the chicken before stuffing the chicken😊

if you remember when planting leeks next year use a broom handle or something similar to push a 6" hole and simply drop the leek in hole, your done and will get much longer whites on your leeks. dont fill in hole just leek at bottom will grow perfectly.

Chicken and leeks are a lovely combination - it's hard to do anything wrong with it. You could also use pork chops or diced up pork if you eat that.

You could try to can your chicken and leeks and chicken broth for a shelf stable meal with some easy cooking for you! Just an idea 💡 😊

I did quite a lot of leeks a couple years ago in the freeze dryer. I did not blanch, the flavor is good, no problems.

It would be a special touch for your applesauce - if a branch is taken from the apple tree, sliced thin with a hole punched into a slice, then sting a 'tie' thru and burn the date into the 'label' - what a really cute label that would be. Your boys may really enjoy a project like that for a gift for their grandparents. I know I would love it. Just what you need - something else to do - LOL.

Add some oil to your butter when frying. It will keep it from burning and smoking. I use olive oil.

Hi Chelsea. We got a lot,of rain today, (Wednesday) so it helped settled the smoke down. You dish looked delish. I planted leeks again this year, it’s been years, I may have to try this recipe, then plan on planting more next year, great video. 🌷🇨🇦

My tomato plants are growing everywhere. Some staked some not. None trimmed. I'm still trying to find a good way to stake them up where they are. Hopefully next year, I won't be crawling around trying to get to the ripe tomatoes.

You can uncover your tunnel, you don't need to protect tomato flowers anymore since they won't have time to produce fruit anyway :)

those sunburst pattypan squash plants are crazy prolific. I made the mistake of planting 3 plants last year and was harvesting 30-50 squashes every week lmao, way too much, just 1 plant this year and no fertalizer seems more my speed of a few a week lol

That was a great looking recipe! I love making meals of anything that includes fresh produce from my garden but especially one pot or pan. What kind of apples did you use for the apple sauce? The absolute best that I have ever tasted is an apple that is almost impossible to find unless you either grow or know somebody with the trees is yellow transparent or lodie, if you haven't ever tried either of those and get a chance to you will be hooked.

Gardening tip: When planting out leek seedlings overplant them (plant them deeply like with tomatoes) and hill your leeks a little as they grow to increase the size of the white bottoms which is the tastiest part. Good luck and enjoy.

I don’t know if you know but you have to plant at least five rows of corn for it to pollinate itself and I wouldn’t even fool witha row that was’nt 50 foot long so 5, 50 foot rows you have to plant out in your pasture

When I do this recipe I use cream cheese inside the chicken with the leek or if making a sauce like you did I add the cream cheese to the sauce. I also stuff a pork joint the same - just make a hole inside the joint, I add apples inside the pork as well. Yummmy. You can use the dark greens for leek and potato soup and use an immersion blender to puree it all - you'd never know the difference - also good in any soup that's blended. Keeping the whites for eating as a vegetable. So jealous of your garden, will be making myself a small garden next year for certain - love your videos.

Long ago I remember reading Julia Child quoting her husband saying that vermouth was an excellent substitute for wine when cooking. I’ve always had a bottle of vermouth on my pantry shelf since then, and used per his advice with grand results.

I have always been scared to use cast iron on a glass top stove. I’m afraid I will scratch it. I would also be scared to put a heavy pressure cooker on it. I’m afraid it will crack the top.

Leeks are unexpectedly and surprisingly sweet. They are not a polarising flavour so don't be afraid to try them - you should be in for a treat.

Harvest Right states you do not have to blanch vegetables before freeze drying. I don't blanch any of my vegetables and they freeze dry perfectly.

I just freeze dried a bunch of my leeks….I didn’t blanch them. They did require extra dry time so I recommend slicing them in half as well. I just received your cookbook today❤
