神炒飯
泰式海鮮炒飯
材料:
白飯(凍)一大碗
急凍蝦仁10隻
仿蟹柳4條
腰果20粒
雞蛋4隻
乾蔥頭2粒
豬肉鬆20克
處理:
1. 腰果,加入粗鹽半茶匙,加入清水浸10分鐘。
2. 蝦仁及蟹柳,清水解凍。
3. 蝦仁及蟹柳已解凍,蟹柳,清水洗乾淨,倒去水分,加入粗鹽一茶匙,乸3分鐘,去除雪味、腥味,及加入少許鹹味。
4. 腰果,清水沖洗乾淨,擎乾水。
5. 蟹柳,清水洗乾淨,切粒。
6. 乾蔥頭,去皮,切片,放蟹柳內。
7. 蝦仁,清水沖洗乾淨,擎乾水,廚紙索乾,加入少許粗鹽,撈勻。
8. 腰果,擎乾水,放碗內。
9. 雞蛋,打在碗內。
烹調:
1. 慢火,在鑊中加入油2湯匙。
2. 腰果,放鑊內,慢火浸,慢慢推。
3. 腰果已轉微金黃色,轉中火,繼續炸,它已炸至金黃色,開大火,撈起,放碗內。
4. 蝦仁,加入生粉一茶匙,撈勻,放鑊內煎。
5. 蝦仁,一面已煎至金黃色,反轉繼續煎。
6. 蝦仁,兩面都已煎至金黃色,轉大火,擎乾油,熄火,夾起放碟上。
7. 雞蛋,打勻,蛋漿倒入鑊內,中火炒成滑蛋,熄火,放蝦仁旁邊。
8. 冷飯,放鑊內,壓鬆,轉慢火,加熱一分鐘,加入鹽1/5茶匙,及糖1/5茶匙,轉大火,繼續炒。
9. 加入蟹柳及乾蔥頭在炒飯內,炒勻。
10. 加入少許油,繼續炒。
11. 加入一半的雞蛋,炒勻。
12. 加入數粒腰果,繼續炒。
13. 加入生抽一茶匙,增加顏色及香味,炒勻。
14. 完成,上碟。
15. 放好餘下的蝦仁及腰果。
16. 豬肉鬆,放適量在炒飯上。
17. 可享用。
Seafood fried rice in Thai style
Ingredients:
Rice (cold) 1 big bowl
Frozen shrimps 10 Nos.
Imitated crab sticks 4 Nos.
Cashew nuts 20 Nos.
Eggs 4 Nos.
Shallots 2 Nos.
Pork floss 20g
Preparation:
1. Cashew nuts, add in 0.5 tsp of cooking salt. Add in water and soak for 10 minutes.
2. Shrimps and crab, defrost in tap water.
3. Shrimps and crab sticks have been defrosted, rinse the crab sticks. Pour away water. Add in 1 tsp of cooking salt, season for 3 minutes, to remove unpleasant smells, and add some salty tastes to them.
4. Cashew nuts, rinse thoroughly. Drain.
5. Crab sticks, rinse with tap water. Dice in cubes.
6. Shallots, get them peeled and sliced. Put in the crab.
7. Shrimps, rinse thoroughly. Drain. Dry with kitchen towels. Add in little cooking salt, mix well.
8. Cashew nuts, get them drained. Put in a bowl.
9. Eggs, break in a bowl.
Steps:
1. Low flame, add in 2 tbsp of oil in wok.
2. Cashew nuts, put in the wok. Soak at low flame. Push them slowly.
3. Cashew nuts has been fried into light golden yellow, turn to medium flame and continue deep frying. They have been deep fried into golden yellow, turn to high flame. Pick them up and put in a bowl.
4. Shrimps, add in 1 tsp of tapioca starch, mix well. Put in the wok and fry.
5. The shrimps, one side has been fried into golden yellow, flip over and continue frying.
6. The shrimps, both sides have been fried into golden yellow, turn to high flame. Drain the oil. Turn off fire. Pick them up and put on a plate.
7. Eggs, get them whisked. The syrup, is to be poured in the wok. Fry at medium flame. Fry it into scrambled eggs style. Turn off fire and put besides the shrimps.
8. The rice, put in the wok. Squeeze it. Turn to low flame and heat up for a minute. Add in 1/5 tsp of salt and 1/5 tsp of sugar. Turn to high flame and continue frying.
9. Add in crab sticks and shallots in the rice, fry well.
10. Add in little oil, continue frying.
11. Add in half of the eggs, fry well.
12. Add in several cubes of cashew nuts, continue frying.
13. Add in 1 tsp of light soya sauce, to increase the colour and flavour, fry well.
14. Complete. Put on plate.
15. Put the remaining shrimps and nuts on top.
16. Put appropriate amount of pork floss on top of the fried rice.
17. Serve.
