⬇️⬇️English recipe follows⬇️⬇️ 素翅 材料: 素翅250克 雞蛋2隻 冬菇(大)3隻(洗乾淨,清水預先浸軟,保留碗中水分) 木耳一隻(預先浸軟) 甘筍(細)一個 西蘭花莖(切絲)少許 薑一小舊 處理: 1. 西蘭花莖,洗乾淨,切絲,切少許綠色部分,加強視覺效果。 2. 甘筍,洗乾淨,切絲。 3. 冬菇,去椗,切絲。 4. 木耳,切絲。 5. 薑,去皮,切絲。 6. 素翅,清水沖洗乾淨,擎乾水,放碟上。 7. 雞蛋,打在碗內。 8. 冬菇,去椗。 烹調: 1. 大火在鑊內燒熱油半茶匙。 2. 冬菇絲、木耳絲及薑絲,放鑊內,爆香。 3. 在鑊內加入清水750毫升,同時加入冬菇水,大火滾起。 4. 素翅,放鑊內,攪勻。 5. 加入調味料: a. 老抽半茶匙 b. 生抽一茶匙 c. 糖一茶匙半 6. 預備生粉一湯匙,加入適量清水,攪勻。 7. 逐少逐少加入生粉芡,在素翅內,至稠厚。 8. 加入甘筍絲及西蘭花莖絲。 9. 轉最慢火,雞蛋,打勻,加入素翅內,輕輕推勻。 10. 完成,倒入大碗內,加入甘筍絲及西蘭花莖,攪勻。 11. 西蘭花碎灑在素翅上,攪勻。 12. 淋上少許麻油。 13. 可享用。 Shark's fin imitation Ingredients: Shark's fin imitation 250g Eggs 2 Nos. Mushrooms (large) 3 Nos. (Get it rinsed. Soak in tap water until they turn soft in advance. Retain water in the bowl.) Black fungus 1 No. (Soak in tap water until it turns soft in advance.) Carrot (small) 1 No. Broccoli stalks (shredded) little Ginger (small) 1 No. Preparation: 1. Broccoli stalks, rinse with tap water. Get it shredded. Add in little green portion to increase sight effect. 2. Carrot, rinse with tap water. Get it shredded. 3. Mushrooms, remove stalks. Get it shredded. 4. The fungus, get it shredded. 5. Ginger, get it peeled and shredded. 6. Shark's fin imitation, rinse thoroughly. Drain. Put on a plate. 7. Eggs, break in a bowl. 8. Mushrooms, remove stalks. Steps: 1. Heat up 0.5 tsp of oil at high flame in wok. 2. Shredded mushrooms, black fungus and ginger, put in the wok. Fry well. 3. Add in 750ml of water in the wok. Add in the mushrooms syrup. Heat up at high flame. 4. Shark's fin imitation, put in the wok. Mix well. 5. Add seasoning: a. Dark soya sauce 0.5 tsp b. Light soya sauce 1 tsp c. Sugar 1.5 tsp 6. Get ready for 1 tbsp of tapioca starch. Add in appropriate amount of water, mix well. 7. Add in the tapioca sauce little by little in the shark's fin imitation until it becomes thick. 8. Add in the shredded carrot and broccoli stalks. 9. Turn to the lowest flame. Eggs, get them whisked. Add in the shark's fin imitation, lightly push well. 10. Complete, pour into a big bowl. Add in the shredded carrot and broccoli stalks, stir well. 11. Put broccoli chips on top of the shark's fin imitation. Mix well. 12. Put little sesame oil on top. 13. Serve.
