Sean was saying that when she’s wearing that beard and hat, she’s hiding her pretty face, therefore it is more difficult for him to masturbate to it. And normally in western culture it is considered extremely rude to talk openly about masturbating to a woman you’re not in a relationship with. Therefore it’s a shock that he would say that about his co worker. But the humour also comes from the fact that many people have probably masturbated to the image or thought of Rachel, but they wouldn’t normally admit it, least of all if Rachel was right there in the room.

Sean Lock "losing it" makes people think it's a compilation of when he laughs really hard at others' jokes (there are a lot of really lovely moments of that). This is mostly just Sean doing/saying crazy things, which is mostly what his brand is anyway. I think a lot of us want the former compilation, if someone working for the channel has the time! :)
