Eva: Thank you for highlighting the South of Italy! Most Americans think that Italy is Rome, Tuscany and Venice and never venture to the south. We are going next year to Sicily and Calabria and plan to go to Acquaro, Calabria where my grandfather was born in 1897. Can’t wait to eat my way through Sicily and Calabria!

The very best Canolo I've ever had was made by a Sicilian grandmother of a friend. She spoke very broken English. She made her own shells, used imported ricotta, and put candied fruit, pistachios, and only a few chocolate chunks in. I had a cannolo years later in Rome that wasn't as good. The Sicilians know their cannoli.

My mom made her own cannoli, too. She made the shells and the filling. She wasn't Italian but was married to my dad who had an Italian heritage but not Sicilian - Abruzzi. She taught me how to make them.

Finally someone who knows that when there's one it's called a cannolo. More than one it's cannoli. It drives me insane when restaurants offer cannoli for dessert and only bring you one. Any fans of cannoli will appreciate this. I found a good Sicilian cannoli baker in my hometown. He was the best in the city. I had him make me 24 cannoli for a family get together. There were nine people present including me. Eight people had never tried cannoli before. Not one of them liked the cannoli. Absolute sacrilege! The only consolation was I had 15 left over to take home for my own consumption.

I am one of the few unfortunate human beings who has yet to try cannoli. Born and bred Vermonter, I was not exposed to many ethnic or culturally significant foods. However, at 65, I am bound and determined to expand my culinary experiences. Living now in Tennessee, there are not many authentic Italian eateries (at least in the rural area where I am), but the search is on! My bucket list is to go to Palermo Sicily. My family immigrated from there and I’ve always wanted to visit. My great grandma lived to be 103 years old and I grew up eating food that she was making and eating her entire life. Most of the recipes were passed down from her to my grandma and then mom. Every time I watch videos from this channel I’m constantly reminded of my childhood I love it.

I've been trying to taste more. Like after the 1st and 2nd hour on the 3 hour bolognese sauce, and still don't get it perfect every time like those women could. I almost believe they were all closet witches, who had the POWER 🤷♀. Maybe being a guy is the problem with us? We'll never know.

I’m Australian of Italian heritage and when we were young and we had an important occasion to celebrate. My father would go into the city which was a couple of hours to travel, and would buy dozens of cannoli for family and friends. I’ll never forget how excited we would be to have these amazing cannoli made by a Sicilian bakery. The bakery doesn’t exist anymore but no one has been able to replicate the same kind of exquisite cannoli as they used to make. But they were chocolate and vanilla flavour that my dad would buy. The flavour and texture of them was amazing. I didn’t try ricotta ones until I was older but they are nice also.

Timely posting as I picked up some sheep’s ricotta from the market in Roma and decided to sweeten it a little bit and add zest as a delicious breakfast spread this morning. It does indeed have that trademark mild “sheep” flavor that’s less aggressive than goat. Can’t wait to go visit Sicily and try the significantly upgraded version, so thanks for the ideas of places to check out. My mother made the best. She was legend. We had a family friend who would call ahead of time to let my mother know she was coming and that she was expecting to be served her cannoli w the coffee. Me and my brother would make a guessing game of how many cannoli she'd eat on her visits. My mom also had the bamboo forms for the dough that came from Italy.

Vizzini is known for its ricotta. It is south eastern Sicily in Catania but closer to Siracusa. Best ricotta sweets I’ve had in Sicily. They have a ricotta festival in April it’s a most do in Sicily.

Gotta question for Ava. My grandmother from Terrasini, Sicily has always made 100 cannoli for her entire family, and grandchildren every Christmas. She always made the cream from heavy cream, and corn starch, on the stove, and would lay the sheets of cinnamon into the cream after it was cooked to the flavor, then when cooled would fill the shells. She never used ricotta. And we had other Sicilian relatives and distant relatives that also made the cream oon the stove. Ever hear of that? I've searched all over KZbin, and no one shows how to make it that way.. THUMBS UP!!!

Best cannoli I ever had was Ferrara Bakery in Chicago. I remember being told that the ricotta was sheep ricotta when I was little, but it be cows milk now. Sheep ricotta is hard to find. Ferrara in New York (different company) sells pre-made filling sold frozen in bags. You deforat in the fridge for a couple of hours, cut the tip off the bag, and pipe into the shell. I buy, shell, and chop my pistachios fresh.

Wonderful!! Love Sicily….my wife’s aunt was from Castronova near Palermo. She and my mother in law, who was from Calabria made pignolata ever year for Christmas….but they would cover the balls with candied honey….it would harden a bit and was just great with coffee, black or brown…..on the eastern shore we made a stop in Giardini Naxos. We got a tip from our host about the Cannoli….Like you, we learned to cook from the best😊

One take away from this is that for my entire life I’ve been pronouncing it wrong . Being of Sicilian heritage in Detroit, my family pronounced it in singular form as Cannola instead of Cannolo. They would also often say Cannolas or Cannoli interchangeably for plural. But the “s” was from english usage being absorbed into the language.

The singular form in standard sicilian language is cannolu. Cannola is the plural form. In the middle of sicily we have a different pronunciation (cannulu) only for singular form.

Pistachios were the only way I had it growing up, so, of course it’s my favorite way! I made your shell recipe Eva, it was very good. I can’t find sheep ricotta here, so I bought a giant tub of it online and it came pre-sugared and ready to use in cannoli. I thought it had a little too much sugar, but very good anyway! Like my grandmother said, the best there is, is the one you have, because you have it! Ha!

@@PastaGrammar I'd love to! However, I can't remember how I got it, since I only bought one container and I see it sells for a minimum of 54 containers! Maybe the Italian store sent me one? I remember I got it through the mail and ordered it online. At any rate, the brand was Ricocrem. I think it was 3.5 kg container but it could of been the 6 kg container? If I remember right, it cost about $80. Geesh. After typing that, I think I am crazy! If you find it, please let the rest of us know!

Ottima scelta la pasticceria delle suore. L'ho scoperta per caso un'estate di un paio d'anni fa. Ma Piana degli Albanesi è indubbiamente al primo posto, specie per gli innumerevoli premi che i cannoli del posto hanno vinto. Ora aspettiamo il video di voi che provate le altre specialità di Palermo ;-)

I migliori cannoli sono quelli di Dattilo la ricotta fa paura quella di piana mettono dentro il miele e copre troppo il sapore della ricotta, alla lunga disgusta.

I love a good cannolo but my favorite will always be cassata. I need to get down to Sicily again, it’s been a while. Bravi ragazzi, another great video. 💜

The last cannoli I made was with a drop or 2 of cinnamon oil mixed into the ricotta.. It was delicious. I will try to find the sheep's ricotta for the next batch...

my family comes from Capo d'Orlando and I have wanted to go there as part of my next trip to Italy... I will definitely have to try the Connolo at Armando when I am finally able to make it there!!
