I’ve been using bacon fat to sear fillet mignon and then put it in a 400° oven. Comes out phenomenal. Is there a better oil to use for 400° oven and at high smoking point? Also I want to use the leftover oil and steak drippings, etc. to make a red wine reduction sauce. Is bacon grease OK to use or is there a better high smoking point oil for that?

A tip on saving bacon grease at room temp. Straining the dark bits and crumbs before storing it will prevent the crumbs from causing it to go rancid.

I’ve been saving my bacon fat for years. To fry steaks in, frying onions. You can even deep fry chicken in bacon fat... that’s really good

Looks great makes me hungry, but you should have tried making a third steak with the bacon fat in place of the avocado oil and putting the butter in for the flavor, but of course we know both of them have flavor, now that sounds good

Please clarify: you said "3 or 4 minutes" for the butter steak and "again, 3 or 4 seconds" for the bacon steak. Which is it? My formula for rare=medium rare New York Strip is 1 1/4 minutes per side for a 1" thick piece of meat.

I use bacon fat to pan fry pork chops and chicken. The bacon flavor definitely comes through because those meats have a more neutral flavor on their own.

Overall I’ve had hit and miss experiences with grass fed. however, at home, I try to eat mostly grass fed because it’s healthy compared to grain fed when you eat a lot of red meat. Comparatively you could also go for pasture raised/grain finished. Health benefits+ grain fed flavor from craft grains.

You use too many tools to cook. I also have no idea why you throw in a whole garlic bulb as well as garlic cloves.
