Great video! I've watched a few videos about seasoning a stainless pan and the one thing I saw was that your pan should be the same temp as the food you're going to fry. For instance, put your eggs in a cold pan then put it in your stove or burner. I've not yet tried this but I've seen others do it.

Great video! I love carbon steel cooking, but the weight and possibility of rust developing makes it less suitable for camping/backpacking. Also, this is the only heavy duty SS pan I've seen with handle hardware attached only on the outside - leaves the inside of the pan free of those little bolts that can collect food and bacteria. I'm sold on this pan and your process of seasoning. Having an egg slide around on the inside of a pan like a hockey puck is a great, but simple cooking pleasure IMHO:). Thanks for sharing!

Don't scrape or scour it off and it will last indefinitely. The "coating" is carbon and that is your non-stick so I wouldn't leave it in a hot fire unattended where you change the carbon's makeup... burn it. Coals are your friend.

I've had an MSR Alpine fry pan for 10 years and abandoned it 8 years ago because of the cleaning. About to buy a non-stick pan but came across this and you've just saved me $20 and a lot of hasselblad. Many thanks for this great tip. If you use drying oil, you don’t need to heat it until it smokes. but if you use semidrying oil you need to make it smokes away, then cool down to make the oil polimerized on the pan. That’s seasoning

A properly seasoned stainless steel pan is meant to be brown. That's the color pan seasoning process should be. If it's not brown you are not doing it right.

It holds up just as a cast iron, or a Blackstone grill. Pretty well. Just treat with a light coat of oil after every cook.

This is my favorite pan to bring with me in the woods. It's a little heavier than the aluminum ones but holds up like a champ. This seasoning really works well to help with the nonstick. I think you should get it. Thanks for watching Stuart. Tell Ollie I said hi.

This is very different than cast iron seasoning. When I do my cast iron cookware I bake the seasoning on for at least an hour in the oven. This seems just seems flash heating the oil beyond the smoke point.. Is there a reason that method is used as opposed to the traditional long baking seasoning method ?

It creates a polymer layer that is virtually just carbon. No harm to your health. As a matter of fact charcoal is basically pure carbon and they use that to purify and detoxify both water and people if they injest poison.

It might be better to use a saturated fats such as coconut oil or in this case Palm oil. Or even Shea butter. Saturated fats are better with high heat and when cooking are healthier to cook with, however this is not a situation of merely cooking with an oil as you are creating a coating for the pan. So I am going to look into it for the saturated vegetable oils.

It's fully possible to do this without getting the burn stain. Just use medium heat. The are several videos of chefs doing this.

Pre heat, covering oil everything is about seasoning. That’s why over 20 years SS pan is non sticky than new SS pan.

Tried this on a 10 on fry pan and it was a gooey mess then burnt and looked terrible. Just scrubbed down with powder bar keepers friend and its almost like new again. Afraid to attempt again, at least my cast iron is seasoned well

Im torn between SS and iron.. The SS is easier to season than the iron but the pan looks dirty as hell after awhile because it starts to brown from the heat, whereas iron is already black

You just broke your stainless steel pan, i work in restaurant and that is wrong way to seasoning your stainless steel, stainless steel must still shining not brown at all, that was an advantage of SS pan, note: SS pan will harm your health if you scratch the surface, and i think SS Pan with brown color harm your health too, seasoned pan will still shining like a mirror, not brown at all after thousand of using, just heat up your pan with thin layered oil brand "BARCO" that have high heat level point, flatten the oil with paper towel, after light smoke appear, flatten and remove the oil excess with paper towel, let it warm, give lot of table salt, flatten with paper tower, pour table salt to a cup, and remove salt excess with paper towel, then repeat the proccess, not brown, the SS pan will more shining like a mirror, after cook dont clean SS PAN with soap, just heatup until warm your pan with excess food, add warm water (not cold water) using your wood utensil, remove your excess, rinse with tap water, dry off, done. We have 15++ year SS pan, not stick at all, still shining like new, that advantage of SS Pan, SS pan more shining after thousand of using. Color change from seasoning proccess is good for carbon steel

This is straight up wrong. Stainless steel does not harm you. It doesn’t react. Chemically neutral, no toxins. That’s also why it doesn’t rust, because it can’t be oxidized easily. Otherwise doctors wouldn’t be using SAE 440 stainless to cut people open. Secondly, you realize that coating a pan with oil is how you season cast iron utensils, right? Why would that coating be a detriment on stainless but not on cast iron?

i tested this seasoning on my camping SS pan and it work. I made some reseach on the subject. Yes SS pan do not need to be seasoning if tou heat it at the good temp before adding oil but for outdoor use it is sometime maybe not easy. It think this way to seasoning is not bad.

Looks good to me. I just did this with a stainless wok about half a dozen times until the bottom was black. First time using that wok without a single ingredient sticking and cleanup was a breeze.

(sigh)... you shouldn’t be seeing brown on a properly seasoned stainless steel pan. Your experiment did nothing more than release the burnt and excessive amount of the oil on to the egg and you ruined your new pan. A proper spatula may have saved the egg from breaking as you flipped it with your stick. Weekend warrior, throwing his money away. Hint: properly seasoned ss pans are very shiny and the surface should be more slippery than a brand new, washed ss pan. Nice to be outdoors, though. 🤙
