Can't speak for modern Simpsons but during golden age the only episode I can think of her having a particular quirk (other than her usual over-the-top devotion to family) is the gambling addiction episode, and that's pretty grounded in a depressing way. Really it's a wonder she didn't go insane like Frank Grimes.

He does briefly appear in an episode where the old monorail track is repurposed as an overground walkway. Mayor Quimby turns on the lights, but the current jumps to the circuitry of the old monorail, which is subsequently activated, and takes off, killing pedestrians in its path, unfortunately including Sebastian Cobb, before derailing and destroying a statue in Leonard Nimoy’s honour.
