You see it when they change the menu and told him to stop running around explaining it and drinking with the customers. He just stood around doing nothing and was mad because he realized he never does anything in the kitchen he just stands around.

That defense is actually very common. Look at card games like magic and yugioh, or games with builds like mmorpgs or something. People post their decks/builds and ask for opinions, when people point out it's terrible and give suggestions on how to change it, they get immediately defensive and say they don't care and want it "to be unique". And you see that everywhere. Because coming up with their nonsense already took "effort" and they "are proud" of what they did, but they know actually making the thing they came up with worth a damn would take actual effort, passion, drive and so on. Because they know anything actually measurable like skill, knowledge and effort can be taken from them, they go super hard on the "unique" angle because it's the one thing no one can ever take from them, because whether good or bad, if it's "unique", it's "unique".

After Gordon left, the old menu returned with the combination concept back on the menu. Sebastian's closed in January 2008 as the family returned to Boston. Yelp reviews prior to the closure are mixed. Chef Q is seen in Season 4 of Kitchen Nightmares as the Head Chef at Casa Roma and says Sebastian just disappeared. It looks like Sebastian is now running a Tree Removal/Landscaping company and a financial/business consulting firm with wife Nichole. Sebastian had a role in 2013 movie Angels Around Me as a detective. Sebastian's became Robano's, an Italian/pizza restaurant and they kept a lot of Gordons décor. They served pizza using the pizza ovens and the feature is pizza by the slice, the Yelp reviews were mostly 1-3 stars before it closed in 2014. It later became The Red Door and Yelp reviews are very positive.

“It’s the best frozen dough I’ve seen”. WTF?! There’s no such thing as a “quality frozen dough”. A good, quality dough is a living, reproducing organism and freezing it kills it. How do you get any air and thus lightness into a dough that was taken out of the freezer mere hours before it’s used? They could at least develop their own dough fresh daily or make a sourdough starter culture easily, keep enough starter going & fed to make sure output is consistent, prep enough dough seeded with starter in advance for each seating & you have a nice, light, airy pizza base when cooked that’s not only delicious but a hell of a lot healthier than pre rolled out frisbees of dead, dense frozen dough. I’m only up to the dough part of the walk-in inspection. What else is this muppet doing to destroy good food other than the atrocious pizza bases & the Oxford Encyclopaedia of Sebastian’s Pretentious Menu?

I believe he was saying it’s expensive as in the whole food cost for the operation of carrying fresh dough. With a failing establishment, frozen food can be kept longer with minimal food waste. Once fresh dough is introduced and if business does not stay consistent, in the end, more money will be put in to food waste

@@MooMooTheCow24 I've worked in a pizzeria and even in that case, pizza dough ingredients are so incredibly cheap especially when he'll be buying flour, yeast and co. at wholesale prices. As long as he has a proper cooling system and they consistently make their dough on time he'd lose a lot less money disposing unused/spoilt dough than terrible frozen pizza.

The operation of carrying fresh dough is not expensive either. You store the ingredients safely (that's not rocket science) and make the dough only when it's needed. And if you want speedy delivery, just make the dough and put it in the oven straight away (instead of letting it rest a bit, Italian way). It will still be better than a frozen one. And cheaper too.

If it's failing then buying in frozen produce seems a reasonable idea but it's probably difficult for a restaurant to recover. The solution is to prevent the restaurant from failing in the first place and that's easier said than done.

I love the fact the when Gordon was being calm and trying to reason and use logic with him he’s acting like a joker and being cocky with the I won nonsense, but the second Gordon gives him a piece of his mind and lays into him he has a temper tantrum and starts smashing n screaming. (Keep in mind it was cut from the show but this loser actually picked up a knife and threw it at Gordon)

What this show has taught me is that there are two kinda of people who become restaurant owners; 1) a person who has an idea or a dream who strives to the best of their ability to make ends meet and 2) people who just don't want to be told what to do, and want to buy their way into authority. Number 1 tends to be more successful, while number 2 ends up being more entertaining. Sad really, but I love watching Chef Ramsay tear into the type 2 people.

Just think of two scenes: him calling his mother and his wife reassuring him that there will be enough money to cover the financial loss. These two women secure his fancy world where that empty-self little guy enjoys his own "uniqueness" which is nothing but being bizarre. It we dig more in the story, we may find out how these two women have been psychologically benefiting from these lunatic relationships.

In the end, Sebastian has no one to blame for his name not being "launched" unless himself. Today, his place could be one of the best wood oven pizzerias of all Hollywood and California. Afther that, could be stablishing small franchises strategically over the country and even using it to promote himself as an actor or a reality show guy, just like Ramsay. With Gordon in his place focusing on pizza he sold more things in one night that in a month with the old menu Today he could be rich and have prestige doing the simple, being just a smart hard working man... I think deep inside he was envious with Gordon But it is how they say: he tossed his pearls to pigs
