That belimbing is belimbing buluh. Used in Pahang's specialty, sambal hitam. Although a makcik at my clinic used it in her sardines and it surprisingly tasted super good and reduce the smell and fishiness (hanyir). The makcik also told me you can actually wash your fish with it too. And if you cant handle the sourness, just roll and press lightly while doing so to get rid of some of the sour juice before cooking it.

@@CookingAhPa No problem. Another thing is, fresh sayur maman (the fermented veggies in the small case) is also commonly used to make rendang maman. A vegetarian friendly rendang.

At my place that belimbing we called "belimbing telunjuk", it sourness is something on it's own in a good way, used to be as ingredient mainly in sambal, curry, and not many people know this, your asam pedas will taste a whole lot better if you use this as it sour source.
