Anju राज जी गर्मियों में कम से कम पांच छह घंटा व सर्दिों में 10 से 14 घंटें भिगोकर रखने के बाद पीसने के बाद वापस दो तीन घंटें छोड़ना पड़ता है दही और मेथी दानों व सौंफ के कारण खमीर जल्दी आता है आप सादा इनो नीले वाला डालकर बनायें तो भी खमीर जल्दी आ जाता है।

In the actual , & The correct recipe here I feel like to give you, 1 cup Boiled Rice,2cup normal little thinker than the daily Rice, which you use to make Dal chawal.1 Tbsp Chane dal,2tbsp Tuver dal 1 cup Uradh ki Dal, 1/2 cup poha (1tsp methi seed if you want soft dosa ) If you want crispy dosa don't put methi seed.1st Wash the Dal's, rice separately changing the water three times .Than soak it separately for atleast 7to 8 hours . soak the Poha one hour before the grinding procedure starts. 1st grind the Dal's(don't throw the Dal soaked water It will make the dosa batter to good fermentation You need not have to use the soda powder)use the same water for grinding as per your requirement.to a smooth paste remove it in a bigger pot or vessel .2sd mix both Rice& . here also don't throw the water keep it in a separate vessel.grind both the Rice along with the Soaked Poha using the Soaked water to a fine paste.then shift it into a Dals paste vessel mix all the batter with little salt. then keep it for 6 hours for fermentation.( One important tip ) take 2 tbsp maidha or wheat flour +1tbsp very nice fine Rava in a small cup add little water make the paste. add this paste to the dosa batter +salt as per your test remember that you have added a little bit salt after grinding.you add water if you want after this keep it for 15 minutes then you can make dosa.heat Tawa on a high flam for a few seconds your method of greasing is correct then lower the flame then spread the dosa batter or make the dosa after applying red chutney spread 1/2 tbsp butter leave for 2sec other all stuffing of subji then you can surve the dosa.make like this& Tell me how was the test.have a nice day.dear Sis seema ji

MAM, ferment the barter for minimum 12 hours, then prepare dosa. Heat tawa in high flame, when hot, sprikle water ( be careful during this), wipe out with kitchen towel, no oil, reduce flame to medium, then pour the barter onto the tawa, rotate IN anti- clockwise direction,to make spiral tracks( just like round running race tracks ) start from centre & gradually move outside, Dosa thickness depends the way you want ( for crispy dosa thinner) do not again rotate on the tracks ( I mean do not loose the tracks.) , then pour little by little oil( ghee gives good taste) on the tracks. now apply 1/2 tsp or little more , the red chutteny ( soak split kashmir mirchi in lukewarm water for while, take out from water, along with garlic, onion,1/2 tsp chilli powder, salt grind to paste, without water ). you get mouthwatering aroma. Now, place potato, onion subzi at the centre if you are making two folds or at the side if it is one fold ( potato subzi recipe: heat oil( little more then normal quantity) add turmeric powder, add green chilli ( no red chilli powder), add onoin cut to medium pieces, fry to translucent, add pieces of cashew nuts (optional) add smashed boiled , salt to taste, finally garnish corinder leaves). Do not use white chutteny , dosa will become soggy, due water content in white chutteny. Good Dosa , will be golden colour at the bottom ( tawa side). Never use BASAMATI RICE ( USE HARD RICE SUCH AS MORGA,). For dosa barter: 2 cup rice + 1/2 cup urad dal @ skin removed + 1/2 cup channa dal + 2 handful rice flakes@ poha( water cleaned, no dust), 1 tsp methi seeds, soak all 3 to 4 hours, thereafter grind to smooth paste, gage the water requirement , barter should be in flowing consistency. Ferment for minimum 12 hours, please see that you place the barter in big vessel, after fermentation, barter will over flow. For preparing Dosa, take a vessel, pour barter, add salt + 1/2 tsp sugar + 1 tsp soji + 1 tsp cornflour ( optional) & follow the procedure of preparation of dosa on Tawa, mentioned above. Try , this IS real MYSORE MASALA Dosa. IF NO RED CHUTNEY, NO POTATO-ONION SUBZI, IT IS PLAIN DOSA. ONION UTTAPAM: ONION CUT TO SMALL PIECES( LARGE QUANTITY), FRY IN OIL FOR WHILE, ADD CUT GREEN CHILLIS ( QTY AS PER YOUR NEED), ADD GREEN AT LEAST 3 TSP, LITTLE SALT (MIND YOU , ALREADY SALT IN DOSA BAR),CONTINUE FRYING TILL OINION TURNED BROWN, TAKE OUT, LET COOL FOR SOME TIME, THEN ADD CORINDER LEAVES ( LARGE QTY). HEAT TAWA IN HIGH FLAME, WHEN HOT, REDUCE FLAME TO MEDIUM, SPRINKLE WATER, WIPE OUT, POUR CUP OF DOSA BARTER( DO NOT SPREAD) ON THE HOT TAWA, NOW TAKE THE HANDFUL OR MORE ,OF ONION MIXTURE PREPARED, PLACE ON UPPER SIDE OF DOSA & PRESS BY HAND, SO THAT , ONION MIXTURE SPREADS AS WELL AS DOSA. ROAST THE DOSA ( IT TAKES TIME THEN MASALADOSA), YOU CAN CHECK GOLDEN BROWN AT THE BOTTOM (TO KNOW BETTER YOU NEED TRY FEW TIMES), THEN FLIP OVER, ROAST FOR SOMETIME , TAKE OUT FROM TAWA. RELISH WITH WHITE COCONUT CHUTTENY ( UTTAPAM NEEDS LOT OF CHUTTNEY TO RELISH) BUT your Dosa looks like a Roti. (sorry for this)

Ladi Ashwani Ji, आप डोसा बनाने की जितनी भी विडीयो देखेंगें आप पायेगें डोसा सिर्फ एक तरफ से ही सेका जाता है तथा उपर की तरफ थेड़ा घी या तेल डाल देते हैं तो डोसा पतला होने के कारण उपर की परत अपने आप सीकने लगती है व उपर की परत का रंग बदलने लगे तब उोसा उतारते हैं आप जरूर बनाये बहुत ही अच्छा बनेगा

Mam, Dosa is not the type , it should have been. First, after grinding to smooth &; thick paste, the bater should be fermented for minimum 12 to 14 hours. ( normally it 16 to 20 hours). hence the dosa ingredients are grounded in evening, & any time of the next day, dosa is prepared. Real south Indian dosa recipe is; 2 cup rice ( no BASAMATI, any hard rice, like Mogra, much harder then this), 1/2 cup skinned urad dal , 2 handful cleaned rice flakes ( poha), 1 teaspoon methi seeds, 1/2 cup channa dal. soak all of them in sufficient water for nearly 3- 4 hours. Thereafter, grind to smooth & thickn paste. Allow it to ferment for minimum 12 hours but preferred is 16-20 hours, if the room temperature is more then 30 degree c, please to see that the ground paste is in bigger vessel, due to temperature , it might overflow. Next day, serve the ground doas mixture into smaller vessel, add 1 tablespoon rawa (suji), 1/2 teas spoon sugar, add salt, add 1 teaspoon cornflour ( optional), mix them all. now dosa barter bis ready. let it settle for an 1/2 hour. Heat Flat thick non- stick Tawa or cast iron tawa ( chapatti tawa cannot be used, since it is shallow in centre), at high flame. sprinkle water( no oil), when it starts sizzling, lower the flame to medium, wipe out The water. take small cup full of dosa bater ( you can use big shallow serving spoon), pour in centre of the tawa, &immediately , slowly rotate the cup or SHALLOW spoon in ANTI- CLOCKWISE , CREATING CIRCULAR TRACKS ( like SPORTS circular running tracks) . The diameter of dosa should be around minimum 8 inches ( bigger then pulka). NOW DOSA STARTS OPENING MULIPLE HOLES, & also START SLOWLY DRYING, NOW , USING TEA SPOON POUR OIL ( GHEE GIVES GOOD TASTE) LITTLE BY LITTLE ON THE TRACKS ( IN THIS AREA DOSA IS THINNER, OIL PENETRATES & SPREADS EVENLY, THE BOTTAM PART OF THE DOSA STARTS TURNING TO GOLDEN COLOUR. NOW APPLY RED CHUTTNEY ( RECIPE BELOW). SPREAD IT BY HAND OR USING TEASPOON. ( NOW DOSA AROMA SPREADS TO MORE THEN 20 FT, MOUTH STARTS WATERING. NO COCONUT CHUTNEY ON THE TOP OF THE DOSA ( DOSA WILL BECOME SOGGY) NOW PLACE, POTATO - ONION SUBZI, ( recipe below) EITHER IN CENTRE ( IF YOU ARE ROLLING DOSA ) OR ONE SIDE ( IF YOU FOLDING TO A SIDE). ONCE ROLLED OR FOLDED, ADD A SMALL CUBE OF BUTTER. THIS IS MYSORE MASALA DOSA. RELISHING METHOD: OPEN THE DOSA, NOW POTATO SUBZI IS VISIBLE, PLUCK A PIECE OF DOSA THEN ADD POTATO SUBZI, DIP IN COCONUT CHUTTNEY, WAH. PLAIN DOSA: SAME PROCEDURE, BUT NO RED CHUTTNEY, NO POTATO SUZI. SERVE DOSA WITH POTATO SUBZI & COCONUT CHUTNEY SEPARTLEY. ONION UTTAPAM : HERE YOU NEED TO PREPARE ONION MIXTURE; CUT ONION INTO SMALL PIECE, (large quantity) green chillies ( cut into very small piece ), 1 tablespoon jeera seeds, 1 bunch corinder leaves,( cut into very small pieces). Now fry onion in 1/2 teaspoon of oil, when half done add green chilles pieces, & continue frying, onion are 3/4 th fried, cool it add jeera, corinder pieces, mix, mixture is ready. SAME PROCEDURE, HEAT TAWA............., JUST POUR THE BARTER BUT DO NOT ROTATE), TAKE HANDFUL OF ONION MIXTURE, PLACE THEM ON THE BATER, AND START PRESSING , AS BATER SPEARDS SO ALSO ONION MIXTURE. TO BE A UTTAPAM, IT TAKES TIME( UNLIKE MASALA DOSA), NOW THE TOP LOOKS , SO GOOD WITH ONION MIXTURE , AFTER 5 TO 8 MINUTES, TO CHECK WHETHER DONE , JUST INSERT A KNIFE, IF DONE BATER WILL NOT STICK TO THE KNIFE, NOW, SLOWLY FLIP OVER, ROAST FOR A MINUTE. RELISHING PROCEDURE: PLUCK A PIECE OF UTTAPAM, SOAK IN COCONUT CHUTTNEY, & WAH. UTTAPAM NEEDS LOT OF COCONUT CHUTTNEY. RED CHUTTNEY: 2 BIG ONION, 3/4 TH POD OF GARLIC, 5 KASHMIR MIRCHI ( SOAK IN LUKEWARM WATER FOR 1/2 HOUR,), 1 OR 2 LOCAL RED MICHI ( 3/4 TEASPOON RED CHILLI POWDER). GRIND ALL OF THEM INTO SMOOTH PASTE, READY FOR APPLYING ON DOSA. POTATO SUBZI: 5 MEDIUM SIZE CUT TON MEDIUM SIZE PIECES, 5 TO 6 MEDIUM BOILED POTATO ( SMASHED TO LESSER THEN MARBLE SIZE), 4 GREEN CHILLIES ( CUT TO SMALL PIECES), 1 TEASPOON JEERA SEEDS, 3/4 TEASPOON MUSTARD SEEDS, 1 TEASPOON TURMERIC POWDER, 4 TO 5 CASHEWNUTS@ OPYIONAL ( VERY SMALL PIECES), SALT TO TASTE, 1 BUNCH CORINDER LEAVES ( CUT TO PIECES.) HEAT WOK, ADD OIL (LITTLE MORE THEN USED IN NORMAL SUBZI), WHEN OIL HEATED, ADD TURMERIC ( REASON OTHERS LIKE MUSTARD, JEERA WILL NOT SPLUTTER OUT), ADD MUSTARD, JEERA, GREEN CHILLIES, ONION, A SMALL QUANTITY OF SALT ( REASON ONION WILLL COOK FASTER), WHEN ONION ARE TRANSLUCENT, ADD SMASHED POTATOES. COOK FOR SOMETIME, SWITCH OF THE FLAME, SPRINKLE 1/2 CUP WATER, & ADD SALT GENTLY MIX, THEN ADD CORINDER PIECES & AGAIN GENTLY MIX. LET IT SETTLE. POTATO - ONION SUBZI READY.

Mam, never use Dhai ( curds ). simple coconut chuttney is: CHUTTNEY IS MADE IN NORMAL ROOM TEMPERATURE. PLEASE REMEMBER. EXCEPT TADAKA. one full coconut, cut to pieces, fried gram ( bhuran dal,) if you do not have this,@ dry roast 1 or 1 1/4 table spoon channa dal to light brown colour, dry roasted green chilli ( depends on your need), 3-4 cashewnuts,( LITTLE MORE , VERY GOOD TASTE), marble size jaggery ( gud), corinder leaves( half a bunch or so ), salt to taste, add HALF cup water . GRIND IN GRINDER TO PASTE ( NORMALLY , LITTLE COARSE NOT UPTO SMOOTH PASTE), chutteny thicker add water ( depends the way you want), taste a bit, IF NEEDED add salt, gud NOT OTHERWISE. NOW TAKE OUT FROM GRINDER, ADD LITTLE WATER REMOVE COMPLETELY , & POUR CHUTTNEY INTO SERVING BOWL. OPTIONAL: TADAKA; HEAT OIL, WHEN HEATED, ADD MUSTARD SEEDS & SPUTTERS , TAKE OUT FROM FLAME ADD CUURY LEAVES ( SO THAT CURRY LEAVES ARE CRISPY), .LET IT COOL COMPLETELY, ( IF ADD IN HOT CONDITION, CHUTTNEY WILL BE SPOILT IN FEW HOURS) ONCE COOL TO ROOM TEMPERATURE, POUR ONTO CHUTTENY . NOW, RELISH WITH DOSA. REMEMBER NO ; TURMERIC, CURDS, CORINDER POWDER ETC. THANKS

Garvit Kathuria ji आप या तो मेथी दाना और सौंफ नहीं डालते होगें मेथी दाना व सौंफ से खमीर जल्दी आता है आप पहले पानी के chante देकर फिर तवे पर तेल लगाकर घोल नहीं डालते होगें अबके आप ऐसे बनायें जैसे बताया है जरूर अच्छा बनेगा बनाने के बाद बताना bhi मुझे Achcha लगेगा।
