We are gearing up to do a food ministry through our church. It’s our responsibility to pick up a bag from the food pantry, come up with dinner menus for a week, purchase additional necessary food and deliver to a student to take home. This is exactly what I needed to see. Thank you!

Awesome idea! Most people just don't know what to do with what they have! Recently used leftover mashed potatoes to make potato cakes.. which served as a hasbrown substitute for breakfast for dinner!

Mindy, I say this with so much affection: you nerd! I love that you did this project. Your enthusiasm about this concept is so delightful and infectious. I think this is an amazing idea! Along with budgeting, I think it could be so useful in training yourself how to use food you already have on hand so that you don't let it languish in your cabinets and fridge. If people are stocking their kitchen with the same limited number of ingredients most weeks, and you know the ingredients can work together to make over 20 recipes, it's encouraging to use what you have on hand before it spoils. Learning how to bring ingredients together like you do in your pantry cooking videos is really skill that some people might have a knack for, but it can be learned with a great demonstration like this one. Congratulations on completing this project! I hope you feel really proud about what you've accomplished.

Cream of soup is very easy to make. 2T each butter and flour (I use rice flour because I need a GF sub). Melt butter in pan and whisk in flour. Cook for 30 seconds or so. When all bubbly, whisk in 1-2 C milk depending on the consistency you want. Season with a little chicken bullion powder and salt and pepper to taste. For mushroom soup sauté some chopped mushrooms in the butter (I usually use a little extra butter) before adding the flour. Then leave out the chicken bullion.

I would love to see more of these! If your family eats cabbage, that’s an ingredient I’d be interested in seeing you include… it is very healthy and often on sale for very cheap, but as a single person it’s very stressful to try to use an entire cabbage!

Cabbage is a perfect staple for every household - even for singles. It is so versatile and you can easily use it instead of salad, put it in stews and soups or as a simple side either raw or fermented. Fermented it keeps forever :)

I absolutely love cabbage, and as a one-person household it's become a grocery staple. I use it in place of lettuce all the time -- on sandwiches and in salads -- and I love that it's crunchier, more flavorful and more nutritious. I also routinely toss it into soups and other hot dishes. I always felt bad, though, if I couldn't use up a whole head or bag of it before it started to turn, but then a couple of years ago I learned you can just stick chopped cabbage in the freezer. You don't even have to cook it first. Defrosted, it's perfect for adding to soups or other cooked dishes with no loss in flavor. So now I have my fresh stash in the fridge for salads and sandwiches and my freezer stash for soups and other hot dishes.

I love wraps, but have normally made them with those big tortilla type wraps, and then it makes too bulky a sandwich for my appetite. Plus cabbage wraps wouldn't have to be just for sandwiches, since they could be used for baked cabbage rolls. Yum! 😋

I recall learning in the early ‘70’s. Perhaps ‘71. From a textbook written, I’m sure from the ‘50’s or ‘60’s, a recipe called Master Mix. Think of today, as compared to Bisquick or a store brand, of such. I think that’s helpful to todays crazy food prices. Happy cooking, & Baking!

My family and me truly enjoy your extreme and basic budget planning meal videos. It has saved us at times when money was tight and with the increased food prices it helps to substitute these meals in a week to help bring cost down. We just recently went from a family of four to a family of three and I have struggled meal planning since. My oldest is off to college so any way we can save some money but still have good meals I am all for it it. Please keep making more! I appreciate what you do. God bless you!

3:16 and I’m already so into this. You addressed budget and space benefits for this but what I see is convenience grocery shopping! Baby #1 is due in just about 2 months and I’m already a “lazy” grocery shopper. I have a lot of weeks when I just run to the grocery store and grab a few basics and maybe some sale items and just hope I can get by. This could be a great go-to shopping plan for weeks when there’s no time for meal planning before shopping!

I love your videos, and am indeed one of those who watch them right away. I have already bought the e-book. I have been married for 35 years, and am so tired of trying to think of menu ideas while standing in the aisle at WalMart, and stressing over food prices! I would also be curious about the $$$ numbers for grocery budgeting. This is a huge help. I think using a program like this for at least a week, along with the actual shopping, cooking and serving should be part of a "life" class in high school, along with learning to file basic tax forms, along with learning finance basics like interest charges, insurance and saving for retirement! What a great idea! It’s always a great idea to find new meals to make with the items you have on hand all the time. I recently heard someone say they don’t meal plan or go to the store to just buy one thing for a recipe. They look at what they have in the house and make a meal based on those items. This falls right in that line & helps with making meals with items you have on hand.

I LOVED THIS. I have an almost two year old and feeding the two of us is still so expensive somehow. But I've been doing it all wrong!! A capsule meal plan is affordable and practical especially for busy parents. I absolutely would LOVEEEE to see more of these videos.
