Seinen is just more mature storytelling not shying away from sexual things, gore or darker aspects of society both seinen and shonen are good if story is told in a very good way but seinen usually tells more deep stories like in homunculus where the person struggles with psychological aspects of being human. Shonen are also good but they have some gags and cliche moments that make them predictable sometimes. I know many shonen are not like that but most follow the story that way. So, the reason people prefer seinen is because of its boldness to deliver a good story not restricted by the inhibitors commonly found in shonen manga because if shonen started showing adult themes then it will stop being a shonen in the general sense. Also donot toss around the word edgy here and there it has lost its meaning nowadays
