"Hello, how are you doing today?" and then wait for them to stop talking. Shouldn't be too long. In my opinion you are there to help them and they came to you for that help. I find that people generally pay attention when I speak. If I simply stand there it's usual for someone to quiet the group and have them pay attention to you. I hope that helps. Please let me know!

Be yourself. Break the ice by talking about that particular wine selection. Know your wine menu. Try to establish a routine. You're on stage. Take their money.
