SEMUR AYAM || INDONESIAN SMOOR CHICKEN
Semur is an Indonesian translation for the Dutch word “smoor”, it means braised or stew. It is an Indonesian type of meat stew, braised in thick brown gravy. Semur (smoor) was associated to the beef, however you could substitute it into various ingredients; chicken, eggs, also for vegetable products, such as tofu, tempeh, eggplant, dogfruit (jengkol), etc. Semur (smoor) is a popular dish in Indonesia and can be found in various parts of Indonesia. There are many slight variations in making semur recipe. This smoor (semur) recipe use boneless skinless chicken, with simple spices and herb and off course Kecap manis (Indonesian sweet soy sauce). 550 grams boneless and skinless chicken thighs
1/8 tsp sea salt
1 tsp lemon juice

1 big size of shallot (around 75 grams)
6 medium size of garlic (around 25 grams)
1 lemongrass
3 grams butter
1/4 tsp sea salt + a pinch of sea salt
1/4 tsp nutmeg powder
1/8 tsp turmeric powder
1 tsp ground black pepper
400ml chicken broth from boiled chicken
1/4 tsp sugar
2.5 tbsp kecap manis
(Indonesian sweet soy sauce)
50 grams leek
3 tbsp olive oil (vegetable oil)
