@@Pho here is Chicago. I have checked every last grocery store in Little Vietnam; not a single one has it. I got my pho Bo to a novice level, and it is well tasty. (I was a prof sushi chef most of my life until COVID) i work In computers now and want to make good pho at home. I want it professional, but without hat nem, it will never be authentic. Please, please tell me how to get my hands on some of the Hat Nem seasoning?

Is your LSP the same as Knorr Hat Nem? Wondering if it is not the same, which do you use in your restaurants?

Hey Kris yes it is the same - reason I had to do it this way is labelling requirements which are strict when sending to the US. They used to allow me to send this packet over as is but then i had issues with customs. After registering my store as an FDA facility had to redo the labelling with nutritional value etc which is why it’s in its current form. It’s the exact one I use at my store except I have “extras I add in” which makes it one of a kind. I do hope to sell a stronger modified version of LSP shortly.

Would this be available at Viet groceries in Westminster/Garden Grove in CA? (Biggest Viet population outside of Vietnam) I go there a lot to get Viet food… actually went there tonight for banh mi and pate chaud.

Definitely I know its available over there - the issue is no grocery store offers to ship one packet to someone in the middle of Nebraska for example. That's where I come in. It started as charity work just to help people on the channel. Did it out of the goodness of my heart. Takes time to pack send do all the paperwork run to the post office but from the early days has turned into a serious part of the channel.

Leighton, love your channel and finding much inspiration. Do you ever do a remouillage or do you find after 24 hours the bones are too spent? If you have done it, do you think it’s any good or not worth it? I have found I can get a gelatinous stock when making a remouillage but it’s just got a muddy flavor and appearance. Maybe that was my technique, but wondering your take on this. Thank you!!!!

Hi Leighton, I've been looking at the ingredients list to find a more local alternative. In every online Vietnamese grocer description of Hạt nêm it always has the disclaimer of "Note Not for children under 3 years old" Any ideas what on the ingredients list that is unsafe for them to consume? Thanks!

I'll take a look for you. I have never seen that disclaimer before on any of the packages I've used. Also this new batch doesn't have a translation sticker on it with the ingredient breakdown. As for hazardous ingredients there isn't anything dangerous in it apart from enhancers which may explain it not being suitable for kids under 3. But this same seasoning is used around the world by Vietnamese family's each day to make up simple soups (canh) so I've never heard of mum's not letting their child under 3 have some of the soup. Also at my store kids under 3 eat my Pho every day without any issue.

Pho Hung is great - best Pho in Portland. I also ate at Pho Oregon. Can't remember the street it's on. It's good too, but Pho Hung was the best.

How does it taste compared to chicken powder flavoring? Here is a video idea: Do a blind taste test with Hat Nem vs Chicken Powder by Korr as well. Im just not convince its that BIG of difference.

Huge difference. They are two different animals. Chicken powder I use extensively at the store for general purpose seasoning of meats. Can be used for soups and most people do. I have nothing against it. My issue is using chicken powder for beef based soups. If you've spent a day brewing this beef Pho why would you destroy it with artificial chicken flavour - which is what chicken powder is. It ruins the taste profile. Hat Nem on the other hand compliments beef/pork based soups.

Many people buy these, add a cube in thinking it will take them to the summit...when really you're only at base camp. You still need to season it to get to the top of the mountain 😂

If you have to use Hạt Nêm, in pho then your pho is not as good as you claim. You're using additives.
