There was a Chinese restaurant in a town near where I lived that served these. When I was young my family would go there after church on Sunday. My family got really close to the owners family and we would eat with them after close. I miss them and that shrimp. The restaurant has long since closed and we moved away, but I’ll never forget eat with them after close.

Although this may taste good it's not the same you've eaten in Chinese restaurants, the real version uses Sichuan peppercorn instead of black pepper and probably a lot of msg (you can skip the msg but it won't be the same, and don't worry, msg is not bad for you).

I watched a bunch of salt n pepper shrimp videos and only yours looks similar to how my favorite Chinese place use to do it. I actually worked at that place after she saw me so often and I think they used both corn starch and potato starch! The skin would be slightly thicker than yours but also have a crispy outside. Thinking more about it I believe they would mix corn starch + water to put the shrimp in first and then powder it good with potato starch mixed with a little corn starch. I loved making it mildly spicy. They would chop a small amount of jalapeño, sautéed it a bit and then put that on top with some crushed red pepper. THE BEST. I need to try this out sometime soon. I have been craving all the Chinese food from my old job lol.

My Aunty married a My uncle who's a chef from Hong Kong....and they run a restaurant. And salt and pepper squid is a standard on our order every time we go there to eat. And as soon as were done with the dish I always save the fried bits of garlic and chili to my chili oil and have it with the rest of my meal. It's that good!!! And I try to make this all the time but it's never the same. I get all the same ingredients but I think because the heat isnt as hot it doesn't turn out as well as uncles.
