These videos come in handy. Have a test on this chapter 2mar and even though I have read it a couple times I seem to retain the info better by watching it being done in the video.

At 0:50 look at the way he's cutting that will get you to get tired easily, she took a bunch of management classes but she can teach a person how to properly handle a knife

My supervisor and I have a question, for the re-heating, the temp has to reach 165 within 2 hrs? Also, after its reheated to the correct temp., how long can it be in hot holdling? Is it 4 more hours? HELP!!!!!!!!!!!!

There's technically no limit on the hot holding, but you are supposed to change utencils, etc. after 4 hours of continuous use.

I think if you want to learn the food service how to serve this going to take you 15 days everyday 4hrs class that's going to make you level one or two guy that who can enter into a restaurant and start working not even starting his own business to start working at a restaurant I think you need that much experience in my opinion
