terra Tokyo Italian is a one-of-a-kind Michelin star restaurant in Singapore that incorporates Japanese food culture in Italian cuisine. Chef Seita Nakahara's drive and passion in pursuing what he loves is admirable. He is also an ambassador for Tokyo Italian cuisine in Singapore.
We sat down with him to find out how he started cooking and what his food is all about.

Sounds Japanese English for me For example the pronunciation of first “s” of “season”, we Japanese doesn’t have sound of that “s” in our language. But we have “s” in “shit” for example. And that’s how he pronounced first s of season. I do understand what you are saying though

He sounds more Japanese than Singaporean imo. The way he says small words here and there: "her" is pronounced as "ha", "cooked" has an umlaut 'ü' sound, he pronounces the American "er" in "first", etc. etc. source: I lived in Sg & Malaysia, wanted to assert myself a little :>

I'm the kind of italian that treasures our culinary tradition and culture and dies a little bit inside whenever I see it being butchered but this... This is a very impressive culinary experiment and I'd love to try it, maybe one day I'll actually get the chance. The chef also looks like a very nice and cool person

Matteo Ventura if you think about it, it really sums up what cuisine is for us Italians: passion, research, and high-quality local ingredients. Seeing a foreigner being so in love with our culture and struggling to export it in the better way possible to the other side of the globe makes me really proud.

I think that's the difference: butcher vs respect. I see lots of "fusion" restaurants that just slap together foods from different places without understanding the root or the cultures that are in each food, but I've also seen fusions where it makes sense and it describes that chef's particular journey. Food culture (like many cultures) is meant to change not stay static. As much as we'd like to think otherwise, we haven't been doing "the same thing" for hundreds of years, the recipes & techniques have been adapted, and have evolved, but the difference is understanding where the roots are.

In 2017, I went to his restaurant, met him and having a quick chat after the meal. At that time, the restaurant wasn't michellin-starred. I choose the lunch set course omakase menu, and it was very delicious and worth every penny you spend with. When I have a chance, definately will come back again.
