I sharpen these at my job and it takes me about 10 minutes to set one up on the sine plate to make sure it's even and flat but even after I check it and grind them the ends are about .003 bigger than the middle. Even on the wet grinder it will suck up from the heat. That's probably why the ends hit first.

I just watched the guy do this at work. They never get the gap closer than about 1/16". They never use any kind of tools to make sure these are properly torqued or even check the gap. It's all by eye and impact gun. I'd like to start doing it instead.

Nice working environment. Your knife tolerances are larger at the center because whomever is doing your sharpening has a machine that no longer grinds the blades true. As a machine with a traveling bed or traveling power head moves back and forth the center of the travel wears 2X faster than the ends creating a curved bed surface that will show in your blades. Your knife grinder should replace their wear parts on their machine to bring the machine closer to true or have the machine worked over by a rebuild shop.

Wear kevlar gloves with rubber friction dots when handling blades, and when installing blades wear kevlar sleeves. And don't stop a rotating rotor with your hand!!!!!! Some health and safety is common sense.
