I really love your kallax unit. I so need one of these. So nice that your dad helped out too. I think covering the top with vinyl is probably your best option - you want something with a smooth surface so that fabric doesn't snag on it. Another option would be that coated tablecloth stuff that you could glue onto the top for a smooth surface. What is nice about that is that it comes in lots of patterns and colours and is probably harder wearing than vinyl.

I suggest you turn the top of the kallix unit into a pressing station using batting and fabric then put your cutting mat on top of that.
