This is the simplest round to V-neck video I've seen. Your method of making the V part is very easy. Before seeing this, I didn't believe the existing neck binding could stretch enough for a V.

Maybe you didn't stretch the fabric as you sew? the thread won't stretch so the fabric has to be at its biggest when you sew or the thread wont stretch with it. Hope that helps!

Where did that extra fabric come from

I think she used it's own color rib then stretched it more to suit new V neck. There were no adding fabric in this case.

Use a ballpoint needle or a stretch needle. Also, gently stretch the fabric as you sew.
