Unaju is a Japanese dish that consists of grilled eel with sauce on top of rice in a square lacquered box. The eel is cooked with a sweet and savory sauce called tare, which is made from soy sauce, mirin, sake, and sugar. The rice is steamed and flavored with the same sauce. Unaju is usually served with pickled vegetables, wasabi, and green tea. Unaju is a popular dish in summer, especially on the day of the ox, which is believed to boost stamina and energy. Unaju is different from unadon, which is a similar dish but served in a round bowl instead of a box. Unadon usually has less eel and sauce than unaju.
