you need to go to a Japanese store and ask Komekoji, fermented rice grain. That’s the key ingredient of miso.

This video is great. I spent a lot of time looking for something good.. But I have a question: How can I avoid alcohol production during the miso fermentation process? Another thing Is there a difference between koji rice and malt rice?
