A Middle Eastern dish prepared with eggs, tomatoes, peppers, onions, aubergines and spices such as cumin and paprika that give a great flavour to this recipe. Delicious and very complete.
INGREDIENTS (Serves 2)
400 gr. crushed tomato or whole peeled tomato
1 red pepper
3 eggs
1 medium aubergine
3 cloves of garlic
1 onion
50 gr. feta, cottage or tofu cheese
1 teaspoon cumin powder
1 teaspoon hot or sweet paprika
1/2 tsp chilli or cayenne pepper
Thyme
Extra virgin olive oil
Salt
Chopped fresh parsley
