SHALGAM GOSHT
Preparation time 10 minutes
Cooking time 35-40 minutes
Serve 2-4
Ingredients
For Cooking Mutton
2 tbsp Oil, तेल
2 tbsp Ghee, घी
2 Bay leaf, तेज पत्ता
1 inch Cinnamon stick, दालचीनी
4 medium Onions, sliced,प्याज
1 kg Mutton (with bones) मटन
Salt to taste, नमक स्वादअनुसार
½ tbsp Tender coriander stem, chopped, धनिया के डंठल
½ tbsp Coriander leaves, chopped, धनिया पत्ता
½ tsp Turmeric powder, हल्दी पाउडर
1 ½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 ½ tsp Coriander powder, धनिया पाउडर
1 ¼ cup Curd, beaten, दही
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
Water as required, पानी
For Shalgam Gosht
1 tbsp Ghee, घी
1 tsp Caraway seeds, शाही जीरा
1 inch Ginger (peeled & julienned) अदरक
2 Green chillies (less spicy & broken into half) हरी मिर्च
4-5 no. Turnip, cut into quarter, शलगम
1 tbsp Butter, cubed, मक्खन
Salt to taste, नमक स्वादअनुसार
Cooked Mutton, पका हुआ मटन
1 ½ tbsp Butter, cubed, मक्खन
2-3 no. Black cardamom, crushed, बड़ी इलायची
1 tbsp Coriander leaves, finely chopped, धनिया पत्ता
1 tbsp Butter, cubed (to finish) मक्खन
For Garnish
Coriander sprig, धनिया पत्ता
1 Green chili, हरी मिर्च
Process
For Cooking Mutton
In a pressure cooker, add oil, ghee, once it's hot, add bay leaf, cinnamon stick, onions and saute it until the onions are translucent.
Add mutton, salt to taste, coriander stems, coriander leaves and saute it for a minute.
Add turmeric powder, degi red chili powder, coriander powder and mix it well.
Add curd, ginger garlic paste and cook it for a while on moderate heat.
Add water, cover it with the lid and cook it for 7-8 whistles.
For Shalgam Gosht
In a handi, add ghee, once it's hot, add caraway seeds and let it splutter well.
Add ginger, green chillies, turnip and saute well, add butter, salt to taste and cook it for a while on moderate heat.
Add cooked mutton and mix it well, add butter, black cardamom, coriander leaves and mix it well.
Mash a shalgam to thicken the gravy and cook it well for a while or until the mutton is tender..
Finish it with some butter and transfer it to a serving bowl.
Garnish it with coriander sprig and green chili.
Serve hot with roti.

I m from Karachi Pakistan and I love shalgham Gosht in winter and I always buy shalgham with 🌿 Ranveer absolutely right that adding Patta enhance this unforgettable dish taste.

Our winters are incomplete without this dish, and pumpkin chicken (shab degh). We use dried shalgum and dried bottle guard as well. Always love your recipes.

In past I did try Shalgam gosht twice or thrice but wasn't happy with my cooking. Now I will follow this recipe and make it tomorrow. By the way my Son, who is a Nephrologist in US, is also fond of cooking. He follows your recipes closely and earns praise for his cooking due to your grace. Today is Friday , and my mumma has made the same dish shalgam gosht with the very same recipe but she skipped 1_2 step like , frying shalgam adding butter ... This type of recipes can never be forgotten cz apne Bihar ki shan hai ye recipe to hmari grandmother and great-grandmother se chli aa rhi 💗. . I have been waiting for this recipe since I saw your shalgam bharta. I have a friend who is from Saharanpur. His family's traditional recipe uses a little soya patta and a handful of methi alongwith a handful of palak. That tastes amazing too.

Day before yesterday my dadi was telling me about Shalgam ghost...that she used to eat when she was a kid...and I was thinking that what a bored combination it would be , mutton and shalgam...but today I watched this video with my grandmother...she was gone back to her old days and hugged me emotionally after watching ❤️❤️ Thanks alot Ranveer sir ❤️❤️...Such dishes uncovers old cultures and feeling of mixed emotions of our previous generations❤️

Even my grandmother "a great cook" also use to make shalgam gosht.Shalgam was straight from our garden, though as a kid I never liked it. Will definitely like to try it again.

Tried it a few times when I used to live in Patel Nagar, Delhi. There was a locality nearby named Shadipur and around the local mosque there was a whole street filled with non veg restaurants. I was wondering if I could ever taste that again now that I'm back in Lucknow. Thank you so much sirji.

Co incidence, my dad bought salgam this Wednesday and he says, it tastes good with chicken, i was surprised so i asked him if it's a dish, and he said, they used to make it when my dad was a kid cos they used to grow salgam ! My husband grew up with Shahganj gosht, dal gosht, Bhindi gosht so it’s wonderful to see this recipe here. It’s now our winter seasonal favourite which we make with our home grown organic Shahgam

Sir its a ritual to make shalgam ghosht as my inlaws are from rudauli near faizabad. And the shaljam leaves have a unique and outstanding taste which I have never experienced staying in Lucknow so far. Great recipe I have learnt from the inlaws. Thanks for keeping these recipes alive. Pn. The ratio of leaves and shaljam is 1:1

Bhai Sahab ...tussee Chaa gaye ho ... We are Kashmiri abd we eat this as well . We ate it last night and as we Kashmiries stayed in Punjab for 80 years before partition many punjabis. Also love this this ..and yes we also call it Shab degh . Only difference is that according to real recipe we put gurh /jaggery as well. Now days we are using simple sugar. The flavours of gaminess of mutton or lamp with bitterness of turnips along with salt and sugar is the special 'monopoly' of this recipe .Still i loved it you are keeping our heritage alive . Also i did enjoyed your Rogan Josh recipe.

Chef .... In Bangladesh its a delicious food . we used beef normally. We used simple and lite mosla to cook it. Like just for gosht mosla . Shalgom just fry on oil and put in gosht. Its flavour just awesome ❤️ Thankyou for this new recipe . I will must try .

My family is originally from Kashmir and Shaljam Gosht and Shabdaigh were regular features in our house. Shaljam and rice or "gongloo batta" is the ultimate combination. The only difference between Chef Brar's recipe and my family recipe is that we add sugar to Shaljam Gosht right at the end. It takes the dish to another level. Shalgam ghost or gogji syun is a delicacy in Kashmir..... its a lethal combination...even shalgam rajma or gogji rajma is simply out of the world

Inspiring and delicious. In Andhra, we also cook mutton combinations. In season, mutton is made with either tender tamarind leaves or raw mango. Otherwise, mutton with drumsticks or gongura is also popular. Though gongura maamsam (mutton) is highly rated, the seasonal ones are our family's favourite.

Hello Chef Ranveer sahab, aap ki baat sun kar laga ke comment karna zaroori hai. Ye dish bilkul zinda hai aaj bhi - in English alive and kicking - aur bilkul bhi puranay zamanay ki baat nahi hai. My mother told me only yesterday that she made this dish (in Rawalpindi). I remember this dish being made at my nani's house all through my childhood and up until I was there. My nani and mumani used to make it frequently. I made the connection only now after listening to you in this video - my maternal family is from Kashmir - hence the reason for making shalgam gosht soooo frequently. I never liked it though. But maybe because nobody handled shalgam the way you did in this video / recipe. THANK YOU for such great and grand service you are doing to our food and the love that you show for each ingredient 🥰

In West Bengal we make a dish with muli and a fish called shol. It turns out too delicious
