I have been sharpening knives for over 50 years and I still stopped and watched the entire thing, enjoyed it too. Dave is one of the few people on the planet who could get me to do that. I learned that there are less expensive stones that can work just as well as the expensive ones and that by itself was well worth the watch. Thanks Dave.

Excellent video Dave. One tip I've seen for beginners is to take a sharpie marker and mark along the cutting edge. As you work it along the stone you'll be able to more easily see if you're hitting the bevel and are being consistent with your stroke. Or when in doubt picture the angle of a match book and that will get you about a 25 degree bevel. I go a little shallower about 20 degrees for my kitchen knives, and the straight razors are more like 10-15 degrees. Generally speaking the shallower the angle the sharper it is but the more prone to getting dull faster. Sharpen according to use. i.e. razor is cutting hair, kitchen knives are slicing meat and veg, 25 degree is better for batoning through wood, forcing their way through package strapping, cutting hoses, ropes etc.

Dave, an excellent instructional video! When I was young, my dad taught me to sharpen my Cub Scout knife and knife safety. He said "a dull blade is a dangerous blade because if you accidentally cut yourself it will leave a jagged wound which can be harder to repair and they can cause accidents and are harder to work with." I have learned to and have been sharpening anything with a cutting edge ever since. A confession, the only blade that I intentionally dulled and never sharpened (other than the tip) was my M7.

I have a knife just like your "old hickory", mine is labeled "Forged Crafted Hi Carbon", cost $1, and works great in the kitchen, would work great outside as well.

The small stone is a slurry stone, used to make a slurry on the surface before sharpening. The slurry does most of the work on a water stone and it creates less wear on the main stone. Water stones cut fast but wear fast as well, oil stones are harder, wear less, but take longer to sharpen. Great video as usual.

My elderly neighbor was a butcher..he he fillet a fish before I could get hold of it....he would stroke that stile so fast you'd swear it didn't leave the blad let alone switch sides...the more I look back the more I realize what I learned....FIND the old guys. Nothing more valuable than free experience or knowledge... make they're day ..ASK THEM....

it's a good idea to flip the stone around while using it to keep from getting an angle off to one side on it! i've seen a couple that have a definite lean to them from that!

Many thanks for this. My husband just gifted me a vintage Mora Rostfri with the original sheath. It's beautiful but the blade is dulled over time, so I'd very much like to put an edge on it again.

Looks great I made about 5 years ago to see if I could do it Spent five or six hrs a day for thee days , it came out OK worth about twenty bucks. I like my collection of old hickory knives . Wish I had the eighteen hrs back

this video is very much appreciated. I am the guy for my friends who has a canvas bag of various wet dry sandpaper, three grades of sharpening stones, metal polish, and a bastard file. I cannot count how many chipped, broken off tip, DULL, rusted knives I have refurbished to "oh Wow Ed, this is sharp and like new"

I've learned from your videos; I've learned from others over the decades. I have only gotten a little bit better, even though I own the finest equipment. At some point, visual coordination comes into play. At some point hand coordination comes into play. I have probably dulled more knives in trying to care for their edges than I have through using them...fine as their steels have been.

amazing I had just bought the same brand but 1000 6000 grit about a week ago I used it on my new mora stainless garberg got rid of micro bevel then I used it on a leather belt I had later I bought a leather strop with compound ....oh yea the garberg slices paper shaves ..pops..hairs and cuts wood like a beast lol I got a carbon steel garberg with leather sheath I just stropped it only and it slices and shaves hair to ps I got one those bps dangler leather knife sheaths that had ferro rod with it awesome sheath for like 17 something bucks on Amazon garberg and kansbol fit in it great

I have 2 very old Hatchetts from my dad who got them from his dad ...I've used grind stones , diamond stone and wet stones and the rod . Nothing will get them sharp .. what do I do ....

My first time doing this I had my finger on the very edge of the knife to feel that I kept an even pressure. Big mistake! I ended up sanding my fingertips down so slowly that I didn’t realize it until I was bleeding. Didn’t heal for a week!

My ol boss taught me to clean tools with vinegar and then coat with diesel. Once diesel dries, it cures like oil on a cast iron skillet. A unbreakable bond. I thought of trying on my old knives with high carbon steel.

I use a different way to sharpen my cutlery, but not too awful different. I use mostly the double grit norton stones, but I also have a couple of the H F. stones for a couple of dollars each and they do a good job, although they are softer and wear faster. A lot of the old men when I was young used to do circles on the stone when they sharpened blades. I just do the cut-a-thin-slice-of-the-stone method since that's what I've had the most success with. As long as we all end up with a sharp blade, that's what counts. Thanks for the video
