Sharpening a dull old butcher's knife only with Shapton 1000

Hier ein etwas längeres Video, um zu zeigen, wie lange es mit einem 1000er Stein (Shapton) dauert, um ein völlig stumpfes Messer küchentauglich zu schärfen.
Bei Minute 5:50 habe ich in einer kleinen Pause mit der Zeitung geprüft, ob an der Schneide noch Ausbrüche sind. Auch bei sehr kleinen Ausbrüchen hakt das Messer beim Durchziehen durch Zeitungspapier. Die Schärfe war schon ganz ok, die Ausbrüche so gut wie weg, daher im Anschluss nur noch wenig Schleifarbeit. In erster Linie, um den Grat zu entfernen.
