I use the term 'honing rod' just to be specific as the word "steel" has too many uses in the knife industry. Also when I use my black ceramic rod on my Western knife steels (see what I mean about confusion?) I use reverse, or stropping strokes. Just a matter of preference but it works well.

Right! When I hear 'knife steel' I'm assuming it's the material the knife is made of, not a honing rod. But then I am someone that's easily confused.

I was seeking some sort of solid information regarding knife sharpening. Unfortunately it turned awkward, a very strange discussion, distinction, and many contradictions with these three gentlemen.

I would have to disagree, the three of them with their personal distinctions helped flesh out the differences in alignment and sharpening, as unique as the variety of flat stones available

I call them all steels but you guys didn't mention perfectly smooth slaughter house steels that keep the edge aligned you should give your knife a few strokes every few minutes or cuts it doesn't remove any metal from your knife the best choice for professionals

I think it would be useful to confine the use of "steel" to a rod this actually made of steel. Anything else would be a honing or sharpening rod, depending on what it is made of. Here's another issue -- is a steel magnetic, and does magnetism enter into the discussion?
