Awesome tool. Wish I had the money to invest. Now, I’m a guy who swears by the old NORTON system which we all know requires a “feel / touch”. Would like to “graduate” to a wheel system, and from what I’ve researched, THIS one is what I would, initially, invest in.

@@anthonyfontanez3969it’s a Tormek grinding machine. It uses a circular “water stone” to sharpen knives and tools. I use a “tri-stone” which has 3 oil-stones, in different “grits” on a jig-style holder. They are flat so it’s a manual set up. Most chefs use the same as I, but I am very serious about keeping my knives super-sharp so I’m always looking for the next, best, thing.

What about the sharpeners that come with knife sets. The long metal rod type thingy? Are they any good for knives and scissors?

They're handy for quick touch-ups to the edge. Often they're a little more convenient than getting out your bench stones but they might be a little less accurate, give a little less of a refined edge. But if that's what you've got, it will make your knives and scissors sharper.

I prefer water stones to diamond in terms of feedback. Diamond resin stones do a great job of providing good feedback and fast cutting.

I was looking forward to this axe jig but it doesn’t fit my Gransfor maul at 45mm wide or my Muller Biber maul at 60mm wide.😑 I’m not sure it’s worth $50 bucks and then having to modify it with longer bolts.

You don't sharpen with a steel stick. You are HONING the edge. Setting it straight again. SHARPENING is done on stones of some kind or a bely grinder

You forgot to mention that the cutting edge/blade is curved not straight and needs angle adjustment while sharpening, by raising slitghtly the dominant hand and pressing down on the edge with the other hand. If someone sharpens the way you showed, they will never get to midle&tip area. The tip will never touch the stone because of the curved bevel.

A steel is not for sharpening, it is meant for straightening the edge of the knife that has rolled over.

Really nice presentation and review! As a side note, having a carving axe sharpened at 15 dps and holding up just fine is a good indication that knives with above than 15 dps edges are essentially on the overbuilt side. JMO.

Could you use the KS 123 jig to set the angle on the axe?

Great question! Funnily enough, I did try that while playing around with the jig. No, the edge on an axe extends too far out from the Universal Support Bar. The KS-123 max knife size is 80mm tall (3 5/32"). If you've got a very small, 3"ish edge to poll axe, it might work.

Here's a few reasons off the top of my head: not all scissors are cheap scissors from Harbor Freight, throwing away blunt scissors is wasteful, some people want the skills to be able to maintain the tools they own and use.

It's magnetic, with four angles: 15, 20, 22, and 26 degrees. Let me know if there are other specifics you want to hear about.

I'm asking these questions about this magnetic sharpener because I have quite difficulty sharpening a knife for some reason I just try and try and try and I I'm not good at it So how is this going to make it easy I've tried all different types of sharpeners before how does this one make it any better and more accurate than the ones I've tried already as far as the angle

Without knowing what you've already tried, I can't really say how this might be better. An angle guide like this will help teach you what different angles feel like during sharpening, ideally with the aim of you eventually not needing the guide and being able to sharpen at or close to a specific angle through muscle memory. But that takes time and practice.

@@PM-wt3ye One is a plate of steel with a layer of resin bonded diamonds on top of it while the other is a block of aluminum oxide ceramic. It’s not that fucking hard to figure out the difference between whetstones and diamond stones. 🤦♂️
