One of the methods we use to test kitchen knives.
The initial sharpness of the knife is measured by letting it cut three times (three cutting cycles). The more paper strips the knife can cut through in total, the sharper the knife is.
The wear resistance of the knives was measured by calculating how deep the knives managed to cut through the paper stack after a total of sixty cutting cycles. The knives were then sharpened in two different ways with a good quality knife sharpener and the knife's sharpness was measured again in the same way.
