The bike can be rented at all the places you mentioned. If you come to Thiruvananthapuram and stay in Kovalam area, there are many beaches there. Then in Thiruvananthapuram There are Padbhanabha Swamy Temple and Atukal Temple in the city. Go there and see the sights of the city. It is an hour and a half bike ride to Varkala. Varkala is a very good place. and to stay Mini Goa
