It's been a few years since you made this video, but I hope you're still checking comments. As an experiment, I tried giving raw asparagus a very light "shave" with a peeler to get rid of the thin layer of bark on the outside prior to cooking it and creaming it, to get rid of those little nasty crunchy bits that never seem to go away no matter how fine you blend it up. To my surprise, when I popped a bit of this prepared asparagus in my mouth, there was no bitterness at all! Just sweet crunchy goodness. I'm definitely adding raw asparagus to my salad selections from now on.

You're wrong, Chef John. If you can't think of a topping in 5 seconds, you need to add Parmesan.

Parmesan - Not so good on desserts. Sesame seeds - good on some desserts. Avocado - Not so good on desserts. My vote is for the sesame seeds.

There are 2 kinds of smoked meats. They come from 2 different parts of the beef. One is the eye of round and that smoked meat is usually round and has a red color around the edges. The better smoked meat comes from the brisket and is also called Montreal smoked meat. Its shaped is more live an oval rectangle and its blackish brown around the outside (round the outside round the outside) Trust me on this, im from Montreal.

From the start of this video I was really hoping you were not gonna use a mandelin (bad spelling) I have one but I would most likely lose a few fingertips trying to do it with asparagus. Good idea to hold the harder root side of the plant to peel too. I have been craving asparagus lately and look forward to trying this. Although I wonder if I could go with a more Greek type dressing.

I get domestic prosciutto ends at $2.99/lb. I think I may use that sliced thin and fried as a nice twist on this recipe!

Hey Chef John! What pan were you using to fry off your pastrami? I noticed you were using metal tongs, so I was curious as to what the finish was in that you didn't mind taking metal to your cookware.

I put an Asian twist on this. Chinese mustard instead of Dijon, White pepper and fried red pork with toasted sesame seeds. Over did it a bit on the dressing on the first go, but good. My asparagus was a bit brittle so didn't quite get the nice strips.

do you think that shiitake mushrooms taste good? Then yes, probably you can use them in your food. Will you have a salty meaty flavor? no.. but if you wanted that, you would eat meat, right? :P

Correct me if I'm wrong, but adding fried pastrami to raw asparagus is not really raw food, now is it? However, that also means there's not really any bad news in this video, just a tasty looking salad! Enjoy!
